egg concoction sans cheese. :D

I sauteed spinach, onion and mushrooms in olive oil. I fried bacon (left over from my 1 week on Atkins induction). I mixed 10 eggs.

I put the veggies in a casserole, added diced ham, poured eggs over it and sprinkled the masterpiece with crumbled bacon.

Baked until set.

YUM! I didn't even think "this would be better with cheese".

YAY! :roll: I was afraid eggs without cheese would be hard for me.

That sounds good!
 

I start 'non-dairy' today. It will be hard for me, but we'll see! Thanks for the 'recipe'!
