Do you think that Almond Flour is SB Legal?
 
I'm just switching over from Atkins to SB. Does anyone have a good opinion about whether finely ground almonds (almond flour) would be SB legal? I know that its not the carbs that matter, it's how refined and fast to digest the item is. I'm thinking that pounding almonds into a powder might increase their glycemic level. I was considering making cookies out of them with all-fruit jam.

Almond flour, like almonds, would be legal, in moderation. Why use it though, when you can use whole wheat flour? Just stick to the 2 to 3 starchy carb rule and you will do fine. The hardest thing to get used to when you switch from Atkins to SB is that you DON'T have to count carbs. Your percentage of calories from carbs should be 40%. That translates into over one hundred grams of carbs a day! The almond flour is probably too high in fats, so for SB, the whole wheat may be the better choice....
