Alright.. it's me again, with more questions.... ;)

In DANDR it says that 2 tbsp of DRIED unsweetned coconut has 0.8 grams of digestible carbs. okay... what about fresh coconut? My DH brought home a coconut (because he had read that part of the book - he was looking for foods he could eat.. grin!) and we cut it all up into 1/2 inch pieces. Now, being a fresh coconut, it's not as concentrated as a dried one... so, does that mean that it has the same or less carbs, or is there something mysterious about coconut that makes it more carb laden when fresh? It's SO sweet (had a tiny piece last night) and if it is low in carbs ... well, that'll be just too good to be true!

Anyone know?

As long as the coconut is not "sweetened" (as many bagged coconut is) it is ok BUT watch the amount you consume...since it does have "natural" sugar...it can be a problem if you eat too much.

FYI...one of my favorite dishes is coconut chicken.

according to my book, for FRESH COCONUT,
1/4 cup (1.4 oz) has 6 carbs and 4 fiber
1 oz has 4.3 and 2.6
shredded or grated (dole) 1 cup not packed has 12 carbs and 7 fiber


just for fun, coconut WATER (hmm I used to love this fresh out of a coconut) has 31 carbs and 10 fiber for 12 oz.

OOOOhhhhh Coconut...mind sharing that coconut chicken recipe. i would love to try it!!!!!! i eat mostly chicken so any way of preparing it would be welcome.

Wow coconut isn't so bad after all! A cup of shredded fresh coconut meat has about 27 grams of fat, 12 grams of carbs, 7 grams of fiber, 2.5 grams of protein. Awesome! I love coconut :)

Here it is (my way):

Chicken parts (6-8 pieces)(I prefer thighs but you can make wings, drumsticks...I like smaller pieces than say a whole breast but that's your choice :))

1 cup plus 1/2 cup (1.5 cups total) of shredded unsweetened coconut

1 can of unsweetened coconut milk
Salt, Pepper to taste
1 - 2 Eggs - beaten
Soy flour - about 1/4 cup (or substitute)
Broccoli (1-1.5 cups of florets)


First, preheat oven to 350 F. Wash your chicken, beat egg in bowl..add salt and pepper to egg mixture. In other bowl, mix soy flour w/1 cup of coconut. Dip chicken in egg then in the coconut mixture. Put aside.

In other bowl, combine the broccol with coconut milk and 1/4 cup of coconut.

Arrange chicken in roasting pan...put the broccoli mixture in between the chicken (in roasting pan) - don't dump on top of the chicken. Sprinkle remaining coconut on top of the entire pan.

Bake at 350 F for about 1/2 hour or until chicken is done and coconut takes on a "toasted" appearance. If you see coconut getting too brown to quickly, lower temp on oven to 325 F.

Let cool for slightly...serve with "mock" rice. (Mock Rice is cauliflower cooked firm, chopped up into fine pieces, butter and salt added to taste).

Should serve 4 depending how big pieces are.

I now have something "crunchy" and sweet to snack on on occasion. I would only have about 1 or 2 half inch pieces in a whole day.. and probably not every day... but it's nice when those cravings are just driving me mad... like that pack of oatmeal cookie mix in the cupboard.. grin! (it's for the kids!!!)

A total tangent but in some of the Caribbean islands, coconut meat and coconut water are sometimes used for laxative purposes. Now we know why! :)

When I discovered this, and I'll warn you, it's WEIRD! I take a few tbl of dried coconut and some Diabetisweet, and grind it up together in my coffee grinder.. you know the sugary lumps in the sweetened coconut?? Tastes just like it...

I even made up a coconut chocolate cookie recipe that tastes almost like the old-fashioned "Haystack" cookies I used to make.....

Okay, I want the recipe for the cookies. I LOVE Haystacks!

I'll TRY to remember what I put in them.. but I'm not a "measurer"!

ALL amounts are approximate...

1/2 c coconut oil, melted
1pouch pre-melted baking chocolate
about 1/4c Diabetisweet (to taste)
unsweetened coconut, about 3/4 cup

mix together, whisk in a little cold heavy cream, JUSt until mixture starts to thicken.

Stir in enough Keto Crisp cereal (plain OR chocolate) to make cookies that hold together.

Chill, and store in fridge, or they'll melt into little puddles.

You'll have to tinker with amounts to get something that works for you, but thats everything I put in them. I am going to try a little peanut butter next time.

The coconut oil is what makes them "set" so it's the only ingredient that can't be left out.

My favourite cookies are the "coconut macaroons". If anyone has heared of a company which sells lo carb ones, please let me know.
