Pancetta-Wrapped Salmon
2 6 oz salmon fillets
4 thin slices pancetta (Italian bacon) or prosciutto (Italian ham) 2 Tb. olive oil Preheat oven to 425 degrees. Coat shallow baking dish with 1 Tb. olive oil. Place salmon in dish and wrap 2 pancetta slices around each piece. Sprinkle with remaining olive oil and fresh ground pepper. Bake until tender, about 10 minutes. Serve on a bed of arugula with pureed cauliflower.
