Suggestions for foods to add
 
Like some of the other members, I find I am hesitant to add many new foods now that I have reached my weight goal. Over the past weeks I have increased my intake of whole grain (particularly low-carb) bread, low-carb pastas, nuts, and berries. I have been eating peanut butter all along without problems. Veggies continue to be a staple of my diet. Hot and Sour soup is another new treat. My blood pressure is great for the first time in years and I wish to keep most sugar out of my diet because I feel it is unhealthy.

Can others suggest foods or even recipes I may not have considered? Has anyone had problems with brown rice? It just seems very high in carbs to me. Last night I made a dessert that was really delicious and easy.

Pour instant, sugar-free Jello Banana Cream pudding into wine glasses. Refrigerate and add a thin layer of almond crumbs. Heat blueberries in 1 tablespoon of butter with 1 packet of Splenda and top the pudding and almond crumbs. Last, top with whipped cream.

I recently added sweet potatoes (3 oz) and apples (3 oz) back into my diet and I am really happy that I have.

I think my favorite add back food has been garbanzo beans. I have had no problems with brown rice either but I still only eat it a couple times a month.

Hi, if you go back to some older posts here there is a thread about adding foods before maintainance, I'll see if I can find it and bump it up for you, congrats on your loss, and yes you should be eatign those foods now :)

Thanks, Kathy. I think I had read that -- spent some time lurking around first. LOL. :)

I vacationed this weekend at the beach. Dinner one night was a Cuban Club Wrap which was a normal spinach/flour wrap. I ate half of the huge wrap filled with pulled pork BBQ, turkey, sour pickles, swiss cheese and mustard. The second half I abandoned the wrap and ate the meat.

Another meal we spotted an Italian restaurant with a Low Carb sign out front. Upon sitting down we were disappointed to find few low carb choices. I asked the waitor if there was a special low carb menu. He sent the owner out who named several dishes he had created. He indicated his business dropped off due to low carb dieting and was happy to learn that the low carb sign brought us in. His specials included a very large salad and a choice of several entrees. I chose italian sausage with tomato sauce, green peppers, that was covered with cheese and baked.

I make something like that then have it over spegetti squash. makes a great meal.

Yes I can see L.C. effecting an Italian place. I for one I not touched pasta in 16 months! ;D

Yum, spagetti squash! I haven't had that since I was young. I have been looking for it in the supermarkets -- I guess it's a seasonal item here in the mid-atlantic. I purchased Dana Carpender's 500 recipe book and there are several good sounding recipes for spagetti squash. She also has a super-easy method for cooking it in the microwave.

BTW, I love her technique for steaming veggies in the microwave. Most are done with just a T or two of water in 5 minutes. Of course now I read that most of the antioxidants are destroyed by microwaving veggies. I knew it was too good to be true... :(
