Butternut ... Allowed on Atkins? Recipe?

Do you know of a good recipe? Doreen said it is probably too starchy. I already bought the butternut squash and baked a 50 g slice of it with salt and pepper only. Any suggestions? Rey |
I don't have any specific recipes, but these flavours are good with it:
Parmesan and garlic Cumin seed and chilies Feta oregano and tomato Curry powder Blue cheese - especially gorgonzola Sweet spices like cinnamon, nutmeg and cardamom You could mix it with cauliflower and mash it up like faux mashed potatoes. Or make a pureed soup using cauliflower in it as well. Thank you very much. I saw a recipe somewhere ... cooked pumpkin (mashed), soy flour, eggs, bacon, and onion mixed and cheese on top ... baked. At that stage I was in Germany and not a pumpkin in sight. Then I came to England and kept on searching. Again I could find no pumpkin. (I was told that tinned pumpkin tastes like "leftover dogfood", compare to what I was used to, so I was scared to try.) So ... I found this butternut squash in Sainsbury's and bought it as a substitute, but the carbs are almost double the amount. Therefore I allow myself only 50g's. Thanks for the info. I will try and invent something with 50g of butternut squash. :) I can't wait to be back in South Africa again ... all the wonderful fresh and cheap veggies !! :thup: Thanks again Rey |
