Easy no bake cheesecake for one
 
1/2 c whipped cream cheese
1/4 c sour cream
1/2 t vanilla extract
1/2 c heavy cream
1/4 c water
6 pkts splenda

Pour heavy cream into small bowl. Whip up with mixer until really stiff. Add water, mix another few seconds. Add vanilla, sour cream, cream cheese and splenda. Mix on low speed for 30 seconds. Ready to eat right out of the bowl!!

If you like more cheesecake flavor, just add more cream cheese. I also add yellow food coloring LOL.
When I make this, I dont usually measure anything, so I was guestimating....so add, lessen, whatever you need to do to get the taste you desire.

Thanks, Vicky! I made this last night and it was delicious.

I used 1/2 cup Philadelphia cream cheese, softened it and mixed in the sour cream and Splenda (3 tablespoons). Then I whipped 1/2 cup 35% cream and added the cheese/sour cream mixture to the whipped cream and kept beating until everything was smooth.

It made more of a very rich "cheese pudding", very thick and creamy, and perfect as a topping (say, a couple of heaping tablespoons) for sliced strawberries.

I recorded your recipe at Fitday and came up with about 1000 calories and 14 carbs. Does that sound right to you? BTW, what's the purpose of the 1/4 cup of water? I left it out and it didn't seem to hurt.

Well, I have a lower carb count, maybe I calculated wrong. Did yours end up making quite a bit?
As far as the water, I use heavy cream, which makes it way to fatty tasting to me so thats why I add the water. When I whip up heavy cream to a real stiff point, it tastes like sweet creamy fat!! When I add water, it spreads it out more and not so fatty tasting.
On my carb count, when I use whipped cream cheese, that has less than 1 carb per 2 tbls. I figure I use about 6 Tbls, give or take...which in turn is approx (at .5 carbs per 2 Tbls) 1.5 carbs for the cream cheese alone. My sour cream is 1 carb per 2 Tbls...figuring I use about 4 Tbls...that is 2 carbs for the sour cream. Heavy cream says 0 carbs so I figure that at .6 per serving...which is 1 Tbs....there are 6 T for 1/2 c.....so for cream I figure 3.6 carbs.

Cream cheese.......1.5
Sour cream............2
Heavy cream.........3.6
Splenda.................3
Total carbs............10.1

And I cant even eat the whole bowl......It usually makes enough for half after lunch and half after dinner.

Hi Vicky,

I think the difference in our carb count is in the quantities and brands used.

I used 8 tablespoons (1/2 cup) each of the sour cream and cheese (regular, not whipped) plus the 3 tablespoons of Splenda added 5 carbs.

I went back and checked the Philadelphia cream cheese and, would you believe, it actually has 9 carbs in half a cup, so my count is even higher than before.

Whipped cream 8 tblsp 3 carbs
Sour Cream 8 tblsp 6 carbs (Western brand)
Cheese 8 tblsp 9 carbs (Philadelphia)
Splenda 3 tblsp 5 carbs

Total............... 23 carbs

You're right though....there's lots more than one serving. And it is so good. Thanks again.

I just finished making a batch and it is good! I decided I would make it last a little longer so I divided it up into cup-cake cups. Now I have 10 little treats and I expect they will last a couple days in the fridge.

Vicky, I don't know if you will come see this or not because you posted back in february :) but I just wanted to know, what brands are you using for each of your ingredients?

I have found that original philidelphia cream cheese has about 8 grams of carb per package (1cup)

My heavy cream says 1g carb per tablespoon

I love cheesecake batter and usually don't even bake mine when I make it :) Would love to cut some carbs out.

Let me know what brands u use if u see this! Thanks!

Hi Katie......

I use Phili whipped cream cheese (which says less than a carb per 2 Tbls) I just figured .5 per 2 Tbls but you could figure it a little more if ya want. I usually just use half the 8 oz container.
Heavy cream I use is Kroger brand which says 0 carbs but I figure it at .6 per Tbls.....I only use 6 T of heavy cream, which is pretty close to a 1/2 cup.
The sour cream brand is Kroger Sour Cream, but the off brand of sour cream at super walmart is the same carb count I believe. 1 carb per 2 Tbls.

My Philedelphia cream cheez says less than 1 gram per ounce, not 2 ounces...?
Atkins carb counter says that cream cheez has .8 grams per ounce I believe..

It's that heavy cream I need to look into and the sour cream.

Hmm that brand name does look familiar... maybe we don't have a kroger store here, but do you think I could find that brand at another supermarket? Like walmart, Fred Meyer or Safeway or Winco Food?

Yeah I don't use the wipped cream cheese, I'll have to try and find that :)

I believe Fred Meyer has the Kroger products......and is owned by Kroger.
