Breakfast Bars

Does anyone have a recipe for breakfast bars that are not high in carbohydrates? Trying to find a good one in the grocery with low carbs is next to impossible. My husband is a teacher and eats his breakfast on the "go". The only thing that sounds good to him is a low-carb breakfast bar & a cup of coffee.

Have you tried the Atkins Morning Start bars? I love the Creamy Cinnimon Bun flavor, nice break from chocolate. A box of 5 bars is about $6 at Walmart. I tried the Apple flavor once - thought they were OK, they have a "soy-crispy" texture.

No, I have not tried the Atkins Morning Start bars--as of yet. I have to make a trip to Walmart sometime this week & will pick up a box.
