Low Carb Devon Cream tea - passport to heaven!
 
I've just had a low carb Devon cream tea for lunch - heaven.
Ingredients:
low carb instant bread,
butter,
Devonshire clotted cream (Safeways)
Diabetic strawberry jam.

The recipe below for the bread is lifted from 'Carblife uk' website - with many thanks:

100g Ground Almonds
25g melted butter
2 eggs
1/2 teaspoon baking powder.
Mix wet ingredients, then add the dry. Pour into whatever container you like- (a lunch box makes it fit exactly into your lunch box afterwards)and nuke for 2 mins (you can tell if its ready by touching the top- it should be dry).


Spread your bread with butter,a thick layer of clottted cream and top off with strawberry jam. Drink tea while eating. Enjoy - I did! :)

Do you think the 'bread' would taste ok on it's own or with just butter?

It should be OK Ebbie. Why not give it a try. There are a number of similar recipes, including one for muffins using almond flour in the recipe section. For almond flour substitute ground almonds. I made some muffins last year which were quite nice and only one or two carbs each. Not sure if the recipe is in my journal. Have a look at the index on page 1.

My favourite bread is Rye bread, too many carbs though. :nono:

I have had a look around the sites for low carb bread most use a bread machine though and at the moment i don't have one. And also i'm far to lazy oops i mean busy to make it by hand.
Liked this recipe though 2mins in the microwave:thup:

Just done a shop at Somerfield they are having a half price sale tomorrow, and will have bread machines for £20 wooohoooo. Unfortunately they will also have TV's etc at half price so i am going to have to just grab the bread machine and run or my bank manager will not be best pleased with me. lol

Just for you Ebbie.B, I just tried a slice with butter and marmite on it. The taste is identical to 'real' bread - if I can remember what bread tastes like after three years...

My daughter wanted to make a cake this afternoon so we tried the instant bread, I added a couple of tsps of splenda as I wanted it sweet. Well when we took it out the microwave it looked, and this is my daughters description, like a bath sponge. Very flat and for too shallow to slice into a decent slice of bread. However we decided to try some and if you closed your eyes and put on diabetic jam/cream it tasted ok. However in my opinion nothing like bread!

wow rob,
made the bread, very nice.then made another one but added 1 heaped teaspoon of splenda and a pinch of cinnamon.nuked it in a small bowl for a couple of mins and voila!one sponge cake.halved it lenthways and spread with diabetic jam and some creme fraiche,dusted the top with coco powder. awesome!

Hi Rosebud and everybody else.

I get two little loaves made in a sandwich box about 4" by 4" about 2 and a half inches high.

OK, so it's no match for 'mother's pride' but it's not bad - and so flexible. I've tried the following variations:

Add about as much again desicated coconut to original mixture and some spenda. You need a touch of cream now as the mixture will be too dry. Spread into blobs and nuke for 2 - 3 mins. Result, coconut biscuits.

Take above mixture and add a large spoon of plan cocoa powder. Result, chocolate coconut biscuits!

I've tried replacing half the ground almonds with soya flour. It works but it's a bit yellow and crumbly - pure almonds is better. I've heard it also works with soya protein powder.

I've also tried toasting it (it works) and frying it (works, but doesn't really taste like fried bread).

Have fun experimenting everyone.

Just tried another one:

75g ground almonds
50g dessicated coconut
1 small teaspoon baking soda
large spoon cocoa powder
tablespoon splenda
two nubs of 85% cocoa chocolate cut into small bits
35g melted butter
tablespoon of double cream
2 medium eggs

Mix the last three ingredients. Add all the dry ones. Put into small plastic containers and microwave for 2 mins or a baking tray and about 10mins on gas mark 5 (I tried both).

Result: Chocolate chip coconut cakes to die for!

P.S. If you over cook them they become biscuits - you can't lose!

PPS If I could afford to buy an Atkins bar, I'll bet I could copy it.

This is what my DH and i have been discussing. He asked me if he should get ready to take out a second mortgage...lol
I thought for a minute they might be a lot cheaper to bring them in line with slim fast, but then thought about the article saying about the fall in slim fast's profits and realised this is probably wishfull thinking.

Just thought about something, i wonder if Boots and Sim fast are part of the same company? Slim fast's loss of profits would answer why Boots wont sell the sticks and are so down on Atkins.

No they're not the same company but it does make you wonder doesn't it? lol I think they're originally an American company. Their contact address is in Palm Beach anyway.

I think Boots should have a serious rethink. I'd love to know how much of their diabetic chocolate and other goodies (and to be honest they have a good range) are bought by diabetics and how much by low carb dieters. Maybe I should keep quiet or they may refuse to sell them to us!

Apparently a lot of the stores no longer stock diabetic chocolate. I know my local one doesn't any more, nor the one in the next town. Mind you, Thornton's range is MUCH better! No fructose in it, gorgeous stuff.
