living with a microwave?
 
I will be in a situation this summer where I will be living in a dorm room with a microwave available and an electric teapot. I will also have a room fridge (I hope!!). Does anyone have any ideas about how I can actually stay on this WOE with such limited resources????

Can you get a tabletop grill aka George Foreman too?

If so, you're set! Grill your meats, steam your veggies in the microwave, keep salad, dairy and berries in the fridge.

We do have a Safeway here in the UK, don't know if it's the same as the US but I think they're pretty similar. Anyway Safeway here do things like grilled chicken in a bag which can keep for a couple of days in a fridge and Marks and Spencer do a terrific range of ready to eat stuff which isn't rubbish like some othe places I know. For the little extra you pay at M&S you can get some lc things which won't break the bank. What are you studying and good luck!

Get bagged salad mixes for the fridge. Will you have a freezer? If so get some of those individually frozen chicken breasts. Then microwave those, add a little mayo or salad dressing for moisture if you want, dice and mix with salad. Eggs can always be cooked in the microwave. Add cheese for an omlette, or make a mock danish. There is even a recipe for little cheesecakes in the microwave. Do a search through the recipe forums for the word microwave, nuke, micro and so on.

Can you boil stuff in your teapot? Could you get a slow cooker/crockpot? Tons of stuff you could make with it.

There is a low carp soup cup where you poor boiling water on top then let seep. I have just trie done flavor so far (broccoli cheddar) wasn't the greatest thing in the world and p robably not suitable for induction. Makes typical college food though when you can't have romen noodles.

I agree with Karin. A crockpot would be wonderful. It does not take that much space and it keeps your food hot. Lots of recipes you can make on it too.
If you like hot wings, you can stock up on those too. Just make sure you read the label. Some of them are pretty bad. Tyson's (if you have them there), has 1g of carb per wing.

Tried to find that recipe you just posted a link to, but no luck. I also couldn't even get to lowcarbrecipes.org. (Did you copy and paste the link or type it in?)

And don't forget - canned salmon, tuna, sardines etc. if you get your fridge you can keep mayo to make these into salads.

Ingredients:
Crust:
1/4 cup butter
1 cup crushed nuts
2 tablespoons Splenda or three packets sweetener
Filling:
1 pound (two 8-ounce packages) cream cheese
1 cup Splenda or 24 packets sweetener
1/4 teaspoon salt
1/3 cup cream
Four eggs
1 teaspoon vanilla
2 tablespoons lemon juice (optional)

Topping: 1-cup sour cream or 2-cups fresh berries


How to Prepare:
Put butter in microwave baking dish and microwave at High for 45 to 60 seconds until butter melts. Stir in nut/cereal crumbs and sweetener. Mix well and press evenly in bottom of dish. Microwave at high for 1-1/2 minutes.

Place cream cheese in medium mixing bowl. Microwave at 50% (medium) power for one minute or until soft. Add sweetener, salt and cream. Beat at medium speed of electric mixer until blended. Beat in eggs, vanilla and lemon juice. Microwave at high for four to seven minutes or until very hot. Stir and pour over crust.

Microwave cheesecake at medium power for 7 to 15 minutes, until almost set in center. Cool slightly and spread with desired topping. Refrigerate at least eight hours before serving.
