Cheese
You can consume three to four ounces daily of the following full-fat, firm, soft and semisoft aged cheeses*, including:
• cheddar
• cow, sheep and goat cheese
• cream cheese
• Gouda
• mozzarella
• Roquefort and other blue cheeses
• Swiss

*All cheeses have some carbohydrate content. The quantity you eat should be governed by that knowledge. The rule of thumb is to count 1 ounce of cheese as equivalent to 1 gram of carbohydrate. Note that cottage cheese, farmer’s cheese and other fresh cheeses are not permitted during Induction. No "diet" cheese, cheese spreads or whey cheeses are permitted. Individuals with known yeast symptoms, dairy allergy or cheese intolerance must avoid cheese. Imitation cheese products are not allowed, except for soy or rice cheese—but check the carbohydrate content.

I've always eaten Brie on induction, it's full fat, filling and wonderful.

I know Brie cheese is allowed on Atkins, not sure if you can have it while on induction though. I tryed to do a search and find out, came up with nothing... maybe someone will know?

saratea Wed, Aug-30-06 14:37

Brie is similar to cream cheese and also similarly low in carbs, so it would be allowed. However, count it towards your daily 4 oz. max of cheese (which means you should weigh it prior to eating).

See here for a full list of allowed foods for induction.

An ounce of Brie has fewer carbs (0.128g) than cheddar (0.363g), so it is fine on induction.

How do you eat your Brie cheese?? I've always wondered how it tastes or how you use it.

Smeared on celery, spread on flax crackers or just cut into wedges, sprinkled on a salad of crisp lettuce and enjoyed!!

After the 12k race this year and came home and ate an entire 8 oz. wedge of brie! God, I love that stuff!

I've been to restaurants that serve baked brie...it's loaded with sugar though..

anybody come up w/ a good baked brie recipe?

saratea Thu, Aug-31-06 06:16

yeah...I think if you're in OWL you can cover it with Pesto sauce. I'm not there yet...still induction...but if you just throw it in the oven it comes out yummy

I eat it by the wedge too.
