Mashed Cauliflower??
 
Hello, All!

Could someone please tell me how they make their mashed potatoes from cauliflower? I tried making it just as I would my potatoes -- and it didn't turn out well. I looked in the recipe section and saw how someone made it out of turnips -- but turnips aren't too good in Mexico right now. :-)

hi Steph,

Here's Karen's recipe for Cauliflower and Goat Cheese Puree .. http://www.lowcarb.ca/karen/recipe013.html ... you can substitute regular cream cheese for the goat cheese; also omit the parmesan and add a little garlic powder.

Just be sure to drain the cauliflower well before processing, or the result will be a bit "runny" (still delicious though)

i cook the cauliflower in chicken stock w/smashed garlic til it's quite soft. i really press the water out too. i mash it up and add butter, cream cheese, sometimes sour cream and a beaten egg. then i bake it in the oven for about 1/2 hr.

Both recipes sound great. I'm going to try both of them. Debbie, since you do yours in the oven -- does it taste somewhat like a twice baked potato? Do you ever put cheddar cheese or any baked potato toppers on it? Just curious. :rolleyes::p Thanks again!!

Yes, you can top the fauxtatoes with anything you would put on a baked potato. Beanless chili, bacon, sour cream, different cheeses…

You are so lucky to be in Mexico. How about queso fresco and salsa verde. Chunks of avocado. Chorizo sausage, air-dried beef. Pico de gallo?

I loved the food and ingredients in Mexico. I’m soooo jealous!;)

Thanks for the little bit of "encouragement" to dress up our cauliflower.

Yes, life in Mexico can have it's advantages. However, the Mexican vendors do like "lime" and they tend to pour it all over their foods (sausages and other market meats) -- they use it like a sterilizer. Lime and other citrics seem to hinder me. Though we do enjoy the cheeses and the advocadoes. :p

I will tell you though, we get some strange looks going to taco stands and ordering gringas (pork and cheese) and lecheras (steak and cheese). We dress them with the advocado and fresh veggies -- and then as we go to eat we pull of the tortilla!! Ever asked a Taco Vendor for a fork so you can eat his taco? :D

i wouldn't say that it tastes like a potato. it has a flavour all it's own that's terrific. it doesn't taste like cauliflower!:D

Thanks again for your comments and suggestions on the "mashed cauliflower".

We haven't tried any of the wonderful recipes yet -- I home school Monday-Friday and then we're moving across town this coming Tuesday. I'm hoping things will slow down enough this afternoon that I can find enough time to cook some. My entire world is in boxes -- but I saved out the mixer and strainer to make the cauliflower!

Well we had our "mashed cauliflower" today for lunch. It was wonderful! Thanks again for the recipes!

We grated some cheddar cheese on top -- even my 6-year old loved it!
