Brie & Canadian bacon quiche
 
I love quiche, always have! This one is easy & tastes great... just thought I'd share.

Brie & Canadian Bacon Quiche
  • 10 slices Canadian bacon (1 oz. each)
  • Cooking spray
  • 8 eggs, beaten
  • 1/2 cup mayonnaise
  • 1/2 teaspoon ground white pepper
  • 1/2 cup grated Parmesan cheese
  • 4-1/2 ounces Brie, cubed
  • 1/2 teaspoon dried Italian herb seasoning
Place Canadian bacon slices, slightly overlapping, around the side & bottom of a 9-inch deep dish plate coated with cooking spray. Set aside. Combine eggs, mayonnaise, pepper, Parmesan cheese, Brie & Italian herb seasonings. Pour into pie plate & bake at 375 for 30 minutes. After 15 minutes of baking, place foil over to the bacon (at top of dish) to overcooking.

I have some other quiche recipes I'm experimenting with - I can post them after I try them out if anyone looks interested on this thread. :)

MMMMM! This sounds GOOD! I'm gonna make it after I hit the grocery store! Can you believe I don't own a pie pan?!! Let us know how your other experiments work out! :)

Okay, made this last night. Quiche part was yummy. Everything was great except the bacon. I don't know if I used the right kind of back bacon but mine was pretty watery. And, because it was watery, the bottom of the quiche was runny. Next time, unless I find some drier back bacon(I've never used back bacon before), I think I will use slices of black forest ham.

I've got leftovers packed in my lunchbag. Can't wait for lunchtime!

Any luck with the other quiche recipes? You've got my mouth watering and I'd love some ideas for a different quiche!
