Delicious egg muffins
I just made the yummiest egg muffins.
Whisked together an egg with a 1/4 cup of sour cream, and some thyme. To that I added some bacon, mushrooms and onion that I had sauteed, and some quartered cherry tomatoes, salt and pepper. Spoon that into some large muffin tins lined with paper and sprayed with olive oil spray. Crack an egg onto the top of each muffin, keeping the yolk together, then sprinkle a little more cheese, some pepper and some chives on top. Bake it in the oven at 180 degrees celcius for as long as it takes for the white and yolk to be almost set (probably about 10-15 mins) - You don't want them fully set if, like me, you intend to microwave them for quick breakfasts - otherwise they'll overcook when you reheat them. YUM!! |
Sounds good.... What about Popovers? Any LC recipes out there?
Sounds really good! How many do you usually make at one time? About 6? Just curious. It would be great to re-heat one in the morning for breakfast. Yum!
I'm wondering if anyone knows a LC version for Popovers. My mom used to make them on special occasions when I was growing up. We couldn't get enough of them. Except for the flour, they're LC. |
