oh man. the mashed caulaflower is so good!! i love it..

I hope its not bad for you, we have it about once a week, but i'd love to eat it lots more!

If you count the carbs, I don't see why you couldn't eat it everyday, BUT a variety of veggies will give you a better chance of getting your nutrients...(had to be a nudge, I'm a Mom)

I just discovered mashed cauliflower last week!!! I am in heaven!!!

I love it mashed with a little cheese, seasoning, and butter or meat drippings (taste like real mashed potatoes with gravy)

I never have been a big veggie eater, now I am getting some every day (salad or cauliflower).

ok dumb question here... ARE YA TELLING ME I CAN MASH STEAMED CAULIFLOWER and it will sort of TASTE like mashed potatos?

Have I really been missing out on this for about 6 weeks?

Belmont, if you steam caulifower until it is almost mushy, then put it through a potato ricer or food processor, it will have the consistency of mashed potatoes. Add what you normally like with mashed potatoes, and surprisingly, it does satisfy that craving. I mix mine with 1 tbsp cream, 2 tbsp butter, and 1/8 c. shredded cheese per cup of mashed cauliflower. Recently I discovered that if I add some steamed mushy leeks to the mixture, it taste more like potatoes.

Holy cow, I gotta try this out. I have not eaten much cauliflower in my life but this sounds delicious and mixing it with butter and cream like what Atiaran did, I think I will be able to up my fat in-take percentage too, which is what I need to do anyway.

I made this about 2 weeks ago... and OMG totally awesome... all your guys recommendations where right on the money :yay:

I did add sourcream and lots a butter... also cheddar cheese

Very good stuff... and from what i understand cauliflower is pretty low in carbs... so i still had enough reserved carbs for the day to have a pretty nice salad :wiggle:

Also made Cauliflower Cheddar Bacon Soup... used a recipe and subbed the potatoe for cauliflower... tasted pretty darn good too!

Subbing cauliflower for potatoes in a clam chowder recipe really cuts the carbs for that too. I did it recently and my family raved about it. Didn't even notice that there was cauliflower instead!

It really is good. Took it to a dinner party the other night, since the hostess was also on Atkins. I put butter, sour cream, cheese, crumbled bacon in it. I was surprised at how many people (guys who wouldn't typically touch califlower) ate it and actually liked it. Any other suggestions on ideas to spark up veggies wiould be greatly appreciated.

This is a huge, huge hit in my house. Everyone loves it. There is really a lot of variation on the recipe. I put cream cheese, butter, sour cream and Parmesan (with garlic and paprika) in mine and then twice bake it with the shredded cheddar on top. Unfortunately, I can't eat this everyday. It's HEAVENLY and I often eat waaaaaay too much. But also my version is super high in fat. I eat A LOT of fat anyway. I could easily go 80-85% fat and totally shoot my calories through the roof. So I need to watch it with this stuff! I would think though, if you are one of those people who has trouble getting your fats and calories high enough this would be PERFECT for you.

Same here Cauliflower is staple at my house I buy 2 or 3 a week! I cook it all up & heat up the left overs. Before LC I like cauliflower but I'd never even thought of mashing it. Now That's the only way we eat it!
