This is a nice treat to add to your Christmas goodies.
Peanut Butter Melts – (my version of Toffey)

2 baking unsweetened choc squares - 18.0
4 Tablespoons butter - Trace
2 Tablespoons heavy cream - 2.0
½ teaspoon vanilla - 1.0
8 teaspoons sugar twin - 2.16
1 teaspoon Crème de Cacao (optional)


Filling

4 ounces s/f peanut butter - 16.0
2 ounces cream cheese - 1.4
2 tablespoons heavy cream - 2.0
2 teaspoons sugar twin - 0.54

Approx. 40 small paper muffin cups, the kind used for candies.


Melt butter and chocolate together over low heat or in microwave. Remove from heat add cream, vanilla and sweetener, and also liquor if using.

Peanut Butter Filling: Mix all ingredients until creamy. Divide into two balls and roll on waxed paper into “log” shaped pieces the approximate diameter of the muffin cups. Put in freezer until easy to slice…approx. 10 – 15 minutes.

Put some of the chocolate mixture in the bottom of each little paper cup (approx. 1 tsp.). Cut logs into pieces approximately one half inches thick and push into the chocolate, so that the chocolate surrounds the peanut butter filling. Store in frig…

I get between 35 – 40 Peanut Butter Cups.

I've already printed it out for my recipie collection! I plan to bring them out at Xmas when everyone else is eating packaged chocolate and treats. I'll have to make lots, 'cause I'm sure they'll want mine instead! Nummy! Thanks, Sharon!

carb counts
 
Total recipe is about 43 carbs in total, so divide the number of "melts" you get into 43. I usually figure just over 1 carb for each treat.

I was wondering if the measurements for the sugar twin was correct. It took 6 packets of sugar twin to make 1 teaspoon, therefor, 8 teaspoons = 48 packets. That is an awful lot of sugar twin for the chocolate part of the recipe. I made this recipe as above and found it way way way too sweet with that much sugar twin. Let me know what I am doing wrong, because they are not edible this way.

hi Donna,

I believe the measures are for the bulk SugarTwin which you buy in a box. It measures spoon for spoon just like sugar :) The little paper packets/sachets are more concentrated ... if you check the label, you'll see that one packet = 2 tsp sugar. So you'd only use 4 packets.

When you say sugar twin, do you mean brown sugar twin or is there a regular one and is it like splenda. I want to try these, but want to do it right. Thanks. Robin

Sharon is Canadian and she is referring to Canadian Sugar Twin. You can use the equivalent amount of Splenda and get the same results.

Just made these, they're waiting in freezer to go to a friends birthday. Now I won't feel like such a freak as I'll have something sweet to nibble on!

They look amazing, Ive had fun licking the bowls too! Not as fiddly as I first though either. I've even got some peanut 'ice cream' left over - heaven!
