Ruben Soup almost 0 carbs!
 
1 can Saurkraut the 14 or 15 oz size(NOT BAVARIAN! IT HAS SUGAR!)
1 can of water & you may need to add more water as it cooks.
1 can of chicken broth (14 oz "ish") same size as the saurkraut.
1 can of corned Beef. ( the kind you have to open with the "key " on the side)
1 stick of butter & 1 T of chopped garlic or garlic from a jar will do too.

In a good size pot melt the stick of butter & brown the garlic a bit.
chop up the corned beef & saute it so it falls all apart & is just a little brown.
all all of the other ingredients & bring to a boil. Turndown to simmer untill the saurkraut is almost cooked to liquid. Add water or another can of broth if the liquid is cooking away! It will smell soooo good you will be temped to eat it before it is really "soup". but it is worth the wait! garnish with swiss cheese & a squirt of thousand island dressing if you want to add the carbs.

ok here are the carbs as I got them off the cans...
Saurkraut 2T 1 carb but 1gr fiber so = 0? or not much of anything I figured
Corned Beef was 0 on the can for 2oz. but ingrediants and sugar way way at the end of the ingrediants so figure at the most 6 carbs for 12 oz can?
chicken broth was 0 also for 1/2 cup servings ~ 3 for the can..not much there!
stick of butter 0
garlic 1
swiss cheese 1 in 1/4 cup which is more than enough for garnish!
This is sooo good you will want to eat it all! but it is heavy on the salt & calories so drink plenty of water!!!!!! & next time make a double batch :yay:

This soup sounds great! I will try it this week - I've got a huge jar of saurkraut and was wondering what to do with it. Thanks.
