DOES ANYONE HAVE A LC RECEIPE FOR HOT CHOCOLATE?
PLEASE SHARE IF YOU DO. :help: THANKS BARB |
hi Barb,
I moved your post here to the Kitchen, so that recipe-minded folks would see it. Here's a recipe from Atkin's Diet Cookbook

Ah...
That looks good... I probably shouldn't have used 3 tablespoons of cocoa when I made mine on the weekend. :daze:
I used boiling water from the kettle and it didn't mix too well... until I put the old hand blender into action... then it mixed it all over the counter. Live and learn... Brett. |
Atkins recipe is very similar to the way I used to make it but I used a 1 Tbsp. of cocoa.
1 tsp. is pretty wussy IMHO! ;) I also used to blend in about 1/2 tsp of guar gum before heating it. It would turn out like a thin pudding. :yum: Karen |
here's a recipe and tips for cocoa mix...
from the ever-fabulous Barbara Pollack of Expert Foods Inc., one of the original LowCarbers in this decade!
Firstly the 'bad' news: unfortunately one cannot import cow 'milk' products (yet! I'm working on it) across the border from the US ... yeah, like I'm a threat to Dairyland Corporation! so for the Complete Mix as shown below, the RealCream would need to be left out and real cream added at the point of serving up (for we non-Americans, anyway). Secondly the 'good' news: the basic mix works like a h*td*am and the cocoa is a LOT less likely to turn into a sludge on the bottom of the cup with the addition of the not/Sugar product, which is a specific blend of 4 different vegetable gums, including guar gum. Thirdly, check out the "to prepare" section below for tips on how to avoid lumps when mixing up a lowcarb hot cocoa. I've always used the "paste" method and it sure helps those floaters blend in better by moistening them thoroughly. Enough babble, here's Barbara's way of making Hot Cocoa Mix... and if you want it, here's the ExpertFoods webpage address so you can check out her other recipes (not ALL of which use her products but just happen to be great lowcarb recipes), at http://www.expertfoods.com/Recipes Quote:

White Chocolate Hot Chocolate
here's my super easy substitute for the real thing:
In a large mug I pour 2 TBSP of Davinvi's Chocolate Flavoured sugarfree Syrup Then I fill 3/4 way to top with hot water Then I pour in heavy cream to taste, usually About 2 Tbsp It's great and because the colour is so pale I call it White Chocolate Hot Chocolate. :yum: |
A quick and easy hot chocolate
I call this my chocolate tea. I use a really big mug (about 16oz), so adjust it down for a smaller one.
Use unsweetened cocoa powder (Hersheys is good). 2 teaspoons of cocoa 2 packets of sweetner boiling water mix it up and then add 1 or 2 tablesoons of heavy cream (kind of like when you have coffee light) I have at least one mug of this every day....helps with the chocolate cravings. At first it seemed kind of thin when you are used to hot chocolate mixes....thats why I called it a tea, now I'm used to it. Yum |
