Do you think that I can make custurd with soy milk instead of real milk? I know many recipes use cream and water, but I quite like spy milk and the calorie count might also be lower.
Another question is it essential that I mix egg yolks and a whole egg into it? Which make sit thick the yolks or the whole egg?

I bet you can. I'd use something like Silk Milk - unsweetened or "regular" flavor - has protein/carb counts similar to milk. I've used a rice/soy blend for all sorts of things like pies and fudge. Give it a try! Make take a bit of working to get it right. Good luck.

I tried it, it does work. The soy milk I used has 0.3-0.4 grams of carbs, so it is a good bargain.

Katy, what brand of soy milk do you use? The carb amount is quite low :roll:
