How bout them tato skins?
 
I really don't like the inside white part of the potato...But I love the skins baked... I am wondering what the carb count of just the skins are.... I like them with sour cream and, or salsa and or melted cheese. yum

According to Fitday, 1 potato skin (raw) = Total Carbohydrate 4.73g and Dietary Fiber 0.95g. They don't specify how big of a potato this is though.

Hmmm? I'll have to look into this DH is missing potatoes something terrible. This could do the trick.

In The Low-Carb Cookbook, Fran McCullough has a recipe for potato skins (the only potato recipe, of course). She said if you take a large (by which I assume she does NOT mean one of those monster baking potatoes, just a big potato out of a bag of russets), flat potato, bake it, cut it in half, and scrape out all but about 1/4 inch of flesh, then fill it with cheese and such, you will have about 10 to 15 grams of carbs.

Hmmmm...still seems like a lot of carbs to me... I wonder what the actual carb count of the potato is... and does it include the skin in the whole count.? Fiber in the whole thing too??? hmmmmm

Did a bit of hunting, the only thing I could find was a site that listed baked potato without skin as
145 cals
34 carbs
3 protien
and baked potato with skin as
220 cals
34 carbs
5 protein,
of you do the math based on this it would be 17 carbs, and I surely hope that's not right because I have been eating the skins periodically. The only part of the equation missing would be fibre, and I would think there should be a fair amount in the skins, but so far I haven't been able to find anything that tells me how much. Not sure if this helps you or me!!! Will have to keep hunting.

Thanks for hunting...:) When I eat the skins it totally cancells out the craving for the innards of the potato. I also would think there would be quite a bit of fiber in the skins.

1 small Potato Skin -- 8g - 1g = 7g Net
1 med. Potato Skin -- 10g - 1g = 9g Net
1 long Potato Skin -- 16g - 2g = 14g Net
1 large Potato Skin -- 15g - 2g = 13g Net

1 small Potato --

16g - 1g = 15g Net (w.o Peel)
20g - 2g = 18g Net (w. Peel)

1 med. Potato --

21g - 1g = 20g Net (w.o Peel)
26g - 3g = 23g Net (w. Peel)

1 long Potato --

34g - 2g = 32g Net (w.o Peel)
43g - 4g = 39g Net (w. Peel)

1 large Potato --

31g - 2g = 29g Net (w.o Peel)
39g - 4g = 35g Net (w. Peel)

I think there's some overlap. I.E. the "skin" figures probably include the peel and some of the innards that may adhere to it...

small = 1-3/4" (D) - 2-1/4" (D)
med. = 2-1/4" (D) - 3" (D)
long = 2-1/3" (D) x 4-3/4" (L)
large = 3" (D) - 4-1/4" (D)

Baked Potato w.o Peel (per ounce) -- 6g - 0g = 6g Net
Baked Potato w. Peel (per ounce) -- 6g - 1g = 5g Net
Baked Potato Skin (per ounce) -- 10g - 1g = 9g Net

Me too osuzana, definitely fills that potato craving, I always did like the skin part the best even before LCing.
THanks cc48510, I'll take your figures, 9 g I can work with once in a while. I must weight my potato skin next time and see how much it weighs.
