Most folk seem to advise against it from what I've read so far, but if you try grating some ordinary cheddar and mashing it together with cream, it makes a very passable substitute!

You can eat cottage cheese, but it is one of the highest carb cheeses and you need to look at the packet to see how many carbs it contains. I've never really liked it myself and so do not use it. There are some much nicer cheeses out there.
