So I tried the pizza quiche thing and came up w/ something new!
I half liked the pizza quiche but it was too eggy like for me - i will try it w/ the pork Rinds next time.
I came up with a new ideas: I love this seafood Lasagna recipe I have but no pasta is allowed. So... I made one recipe of the egg crust into 2 - 9x13 pans. I wanted it very thin. I used one pan as a base w/ shrimp, scallops, parm, cream, butter - I basically made an alfredo sauce to pour over the shrimp and scallops. Then I scraped the layer of quiche off the other pan and used it like a layer of noodles and then topped it with Cheddar cheese and some more alfredo sauce. I do not count carbs but I must tell you this was oh so good! My dh didn't realize it was a lo-carb dish as he is not LC. |

How did you make the alfredo sauce or did you buy it..it is a great idea...i like finding info like this..thanks for sharing..

alfredo sauce is really not very complicated--saute about 3 cloves of garlic in some butter about 2 minutes then add 1 cup heavy whipping cream, bring to a near boil and simmer for about 10 minutes. right at the end add about 1/4 to 1/2 cup shredded parmesan cheese and let melt into sauce--it's that easy!

I use butter in my alfredo sauce too. about 1/4 stick to the 1 cup of cream.
