Roasted Green Beans
These are great! My sister made these for me a few months ago and I haven't eaten them any other way since. They look a little 'ugly' but they taste great. This also works for asparagus.
Top and tail the green beans and place in a bowl or plastic bag. Add 1 - 2 TBS olive oil (depending on the amount of green beans) and stir (if in a bowl) or mush around (if in a bag) until beans are well coated. Place on a cookie sheet covered with quick release foil, add coarse salt and pepper and roast at about 410 for 25 - 30 minutes, or until beans start to brown and get wrinkled. Asparagus takes less time, about 15 - 20 minutes |
Thanks for the recipe!! I tried these last night and they are great. I sprinkled some cheese on them right before they got done. I will be eating this often.

I'm bumping this up for other new people like me. I am not a big green beam fan AT ALL but these are the best green beans I have ever eaten.
This is another veggie that I am making quite frequently and can't seem to get enough of them. We just had them last night, but I am seriously thinking about them again for lunch tomorrow. The funny thing is I never was a "vegetable" type person except for corn and potatoes. I am finding so many great things to eat, and I was afraid I would not. |
