Need to know how to make this fancy thing!
I had this amazing salmon aboard a dinner cruise and I would love to know if its possible to make it low-carb. I only know the item description, perhaps you can tell me how to make something like it.
"An eight-ounce boned center cut filet baked with white wine and lemon accompanied with a light bay shrimp veloute' " That's all I know. I know that it was a wonderfully cooked piece of salmon with a white sauce atop. That's what I am assuming the veloute is. Thanks in advance! |
I don't have a recipe but I can tell you how...
Preheat the oven to 350F. Place salmon filets in a baking dish. Bring a cup or so of white wine and finely chopped shallots to a boil. Pour over the salmon, cover with foil and bake until the salmon is almost cooked through, maybe 15-20 minutes? After you've drained off the wine in the next step, re-cover the salmon with the foil and keep warm. Drain the wine off into a pot and boil till reduced to a glaze. Add a cup of whipping cream and boil until thickened to a light sauce. Season to taste with salt pepper and lemon juice. I would also add some fresh chives. Stir in the shrimp - it only takes seconds to heat them - plate the salmon and pour the sauce over the salmon. Looks like dinner! Karen |
That sound great we are in a salmon craving mood right now and that would fit the bill. Thanks karen
