Freezing Zucchini

I'm not sure which forum I should ask this, but I bought 3 zucchini to make zucchini muffins but I won't have a chance to make them until next week. Can I shred the zucchini and then FREEZE it for use later next week? I used to do it all the time for banana bread/muffins, but not sure if you can do it with zucchini too.

yes yo can!

I shredded mine and put it in freezer bags...freezes well!

Yeay!! I hate being under "pressure" to bake before my ingredients go bad.
