Sweetener question
 
Hi there,

Just a quick question on sweeteners. My sister and I are having a birthday at the end of this month. We're both LCing and I wanted to make a low carb cheesecake. My question is, what sweetener works best when cooking? I heard Stevia is the best natural sweetener but vile in cooking. Would Splenda work? Any other ideas?

Anyone know anything about Sugar Twin? Is it like Equal where it affects your system like sugar or is it more like Splenda/Stevia?

I've been using Splenda in cooking and it works wonderfully, so I'd recommend that.

I recommend that you use a blend of two different sweeteners together. They work synergistically and you get a sweeter taste than if you use just one sweetener alone. Meaning you can use less sweetener overall. For example, the recipe calls for 6 packets of sweetener A. Instead, use 2 packets each of sweetener A and B. :)

The bulk Splenda is supposed to measure cup for cup the same as sugar, but that's only true for amounts of ½ cup or less. One cup of Splenda will make your recipe go beyond sweet to actually tasting bitter. Not to mention that one cup of Splenda has 24g carbs :( Start with half of whatever the recipe calls for, then taste to see if it really needs more. Chances are, it'll be just fine with half :cool:

I use a mix of liquid stevia extract and liquid SugarTwin (which in Canada is cyclamate :yum: ) both are zero carbs.

Thanks Doreen. I was looking yesterday at the no-bake cheesecake in the receipes section and I did notice Karen has Sugar Twin and Supra. They seem like a good combination.
