What';s for lunch? Saturday, Dec. 1
Got some great dinner ideas last night. So what's for lunch today?
I'm having the second half of what I had yesterday -- 1/2 cup chicken salad (very rich, mayonnaise AND sour cream, and No Bad Stuff) on half a bag of baby romaine lettuce (which was wonderful.) No other dressing needed. This will give some of you your laugh for the day -- I am not a salad eater. I'll eat them in a restaurant, but never prepare them at home. Well, blush, they certainly are filling, aren't they? For a month, I've been hungry within two hours after my LC lunches -- hamburger patties, a steak or chop, etc. Yesterday, this small, simple salad lasted 5 hours. This is definitely vegetables month :) |
What's being served
Hi!
I will be serving up: cold leftover broiled salmon (yummy) sauted mushrooms in butter slices or cucumbers. Dinners are more difficult for me. Tonight the family is eating pizza -- I have to come up with something, I think I will poke around a bit today looking for ideas. A Thin Me. |
Pizza is not the problem, the crust is. I just eat the topping off and throw the crust away. I have found that if I make my WOE easy for me I stick to it. When the kids want sandwiches from the sub shop, I just eat the inside out of mine and throw the bread in the trash.

Thanks, A Thin Me. I love salmon, but never know what to do with leftovers, so I'm glad for the idea.
For dinner, I'm also having the second half of yesterday: Mock Swedish Meatballs. I bought some already prepared meatballs (no breading, just beef, pork, veal and lamb, and spices, so they'd be easy to do, and one wouldn't need four kinds of meat), browned them, took them out of the pan, poured off a little of the grease but left the "drippings" and added 2 oz of cream cheese and a splash of cream. (This was for one serving, four meatballs). Cooked until it looked like a sauce. It was wonderful! Tonight, I'm doing the same thing, but putting each meatball in a mushroom cap (that will be sauteed in butter first). |
Lunch! Since today is a regular low carb day for me I indulged with dairy! I had a bowl with turkey mostly white meat and skin but a few pieces of dark meat, on this I put 2 tablespoons of salsa, 1/4 cup of mozzerella cheese and gobs of sour cream. Yum, yum, yum!

I had a late breakfast so I guess this would be considered an early dinner...
When I get back from my Karate class final review (YES, I have a final in my college Karate class...keep laughing :rolleyes: ) I'm going to have steak with melted provolone cheese on it. I'll probably have some raw broccoli and cauliflower, dipped in bacon ceasar dressing too.

Great ideas, everybody!
I'm so glad I found this forum! I have got my next two weeks of lunches planned! Good ideas from all. Today I was still working on the leftover turkey in my freezer. I sliced mushrooms, sauteed them in butter, added a bunch of chopped up turkey and heated thru. Sprinkled with a pinch of salt and it was pretty good. I guess you have to be a mushroom lover though, like me.

They were from a natural foods chain in my area called "Fresh Fields." I asked the meat counter guy who said they had no breading, and I couldn't detect any. Lots of herbs, though. They were excellent.
