Like Baked Potato with everything?
I am in love with bacon, so I usually make a huge batch of chopped bacon on the weekends by baking it in a large pan for several hours, then keep it in the fridge for easy access. I also keep containers of minced (love the food processor!) scallion, shredded cheese etc. Anyway...
One of my fav things to eat is a small boww, fill the bottom with grated sharp cheddar cheese, throw a couple tbs of crispy bacon pieces on there, add a generous blob of full fat sour cream and sprinkle scallions on there. Mix and enjoy! If you need more "volume" out of a meal you can put this mixture onto a bunch of lettuce, it is very satisfying. Meg |
Just looking through the quick meals thread to find some new ideas - your idea is a winner!!! Sometimes I wouldn't eat the whole potato anyway - I always say I like a little potato with my sour cream!!!!!!
I also bake my bacon on a baking sheet - you can do a whole lot more that one and no splatters to clean up!!! |
This is a good idea I do this and I also but bacon, tomatoe and mustard in a bowl to have a BLT salad, quick and easy

Put it all on mashed cauliflower, and it's just like mashed potatoes with all the fixin's - yum!

I cook up 2 pounds at a time and use 2 baking sheets lined with foil. I bake it at 300' and there are no splatter! I just swap the baking sheets around every 20 minutes and check it for doneness. Usually takes 30-45 minutes.
