I just love sea bass and have a nice piece of it in the fridge, just waiting to be cooked. This fish is so rich, I hate to mess it up with even more richness.

I have a great recipe which uses sundried tomatoes, goat cheese, Hy's seasoned salt, olive oil (that's it!). Salt both sides of the fish, rub in olive oil, fry one side in olive oil for 2 minutes or so. Flip it over, top it with cheese and tomatoes, cover. Leave for another couple of minutes then check for doneness. If the fish flakes easily, it's done!

Carbs are only in the cheese and tomatoes, depending on how much you use.

It's really a great dish but I'm looking for another method, just for a change. The simpler the better too.
