Horseradish + Feta vinaigrette
In a small bowl add:
2 tbsp extra virgin olive oil 1 tbsp red wine vinegar 1 heaping teaspoon of prepared horseradish 3-4 small cubes of greek feta, crumbled 1 tbsp of brine from the feta 1 tsp of water from dill pickle jar a squeeze of lemon 1 pinch of black pepper Whip it up .. use a spoon or laddle to serve on your salad so you scoop up the bits from the bottom. I used this on salad greens and it was divine. Because its spread over the salad, the horseradish kick is tamed down ... Also - be sure to put fresh basil into your salad - it seems to complement this very nicely. Notes I found most horseradish has sugar added to it or hidden away. I found Cedarvale brand horseradish doesn't have any sugar / carbs in it. Walmart carries it. I made this today completely by fluke .. 3rd day into induction .. Not 100% sure its induction friendly - but I ate it anyways. |
This sound delicious! I have most of the ingredients but will have to pick up some horseradish. I will try this for sure!
