Is there a reason why we shouldn't eat beets?
 
I've never seen people refer to beets in their list of veggies. I'm talking about plain cooked red beets, not Harvard beets or pickled beets (which are loaded with sugar)

They are anywhere from 6-8 gr carbs ECC for half a cup depending on the counter you use, or the brand for canned. It's high for people only on 20 or 30 gr carbs per day. But for people like me who have been able to up their carb levels to around 50, the numbers would make them an option and welcome change.

Is there a reason why we shouldn't eat them? Are they way up there on the Glycemic index?

I've had some this week in an amazing salad at a restaurant:
bed of mixed greens topped with beets, crumbled feta, onions, and drizzled with oil and vinegar. Last night I tried to reproduce that at home, adding a side of salmon fillet rolled up and stuffed with a mixture of shredded cheese, crumbled pork rinds and asparagus. I have a hankering for beets right now to help boost my daily veggie carbs.

You're almost at goal so I can't see where they would be a problem. I would just suggest that you have your most carby veggies at the same time to avoid triggering an insulin surge throughout the day.

Hi Angela
I love beets too, and have been wondering the same thing. In the glycemic load/glycemic index article, http://forum.lowcarber.org/showthre...&threadid=73344 I noticed a lot of foods I have always considered healthy that I have not been able to eat on Induction. Also, if I was eating beets, a portion would be about a cup for me, so it is relatively high on the carb scale.

Ewwwwwwwwwww Angela - why would you even ASK such a question. Beets are the devil's dessert. I couldn't eat those if I was FORCED. HAHAHAH thanks for the chuckle! I am glad someone loves beets so the beet farms can stay in business.

I do believe variety is the spice of life and it is good for us to eat a wide range of foods. In the meantime, pass the artichokes!!

In Alberta there's a factory that processes sugar from beets. They must be pretty high in sugar to be able to use them as a substitute for cane sugar. Maybe they're using a certain kind of beet that's high in natural sugar though?

Suger beets are a difference kind of beet then the red beets that you eat. Suger beets are raised for suger and regular beets have a lot less suger in them. If you can find them, the orange beets are the best.
