Hardee's Cinnamon n' Raisin Biscuits!

I made these last night and all I can say is heaven!! Warning though: Dont keep these around after you make them or you will over indulge! (they are that freakin good!)

Okay here we go.

2 cups Carbquick
1/2 cup Hood LC milk
1/2 Slpenda
1/4 raisins (only 1 or 2 per biscuit, don’t freak!)
1 teaspoon cinnamon

Glaze
1/3 cup powdered Splenda (put your splenda in a food processor)
1/3 cup heavy cream
1/2 stick butter

Preheat oven to 425F.
Stir all ingredients together until a soft dough forms.
Drop by spoonfuls onto a greased cookie sheet and sprinkle with additional slpenda
Bake for 10-12 minutes or until golden brown.

Drizzle glade mix over biscuits
Let sit for 5 min.

Enjoy Reasonably
AROUND 6-8 CARBS EACH!

Can't wait to make these Saturday morning! Thanks for sharing. I gotta get a food processor, though. I'm, like, in the 19th century here and I've just never bought one. Wonder if I could run the Splenda through my coffee grinder to powder it? I'll give it a shot!

yes, you can run splenda in a cofee grounder for the same effect.

I'm not through Induction yet and can't wait to use the 3 pounds of Carbquick I have sitting in my pantry for this recipe. Sounds great!

Thanks!...1/2 cup seems like a lot especially when you add in the splenda in the glaze. Might have to tweak it a bit ;)

I add 1/2 cup to offset the salt in the Carbquick. I make these last night with dired apricots instead of rasins (even less sugar)

they were soooo good.

Oh My!!!!

Made only 1/2 of the recipe... it made 3 Large biscuits. Ummmm...... if you don't trust yourself, make 1/4 of the recipe..... THESE WERE EXCELLENT!!! I left out the raisins ( I don't care for them). I was thinking that a tablespoon or 2 of grated apple would be nice maybe...I'll try that next weekend.

Also, I was SHOCKED by the amount if splenda you need to get 1/3 c of powdered splenda. I tried an alternate glaze at the end just to try it, melted butter in micro, added splenda and heavy cream, and then microwaved again until it was all melted nicely. I used equal amounts of all 3 ingredients. It worked fine and I'm sure will save a lot of carbs considering the amount needed for the powdered version.
NOTE: I was not sure "How" I was suppose to make the glaze, the recipe didn't state how, I don't think... I melted it all in the microwave... I wasn't sure if it all was suppose to be creamed together or heated or what, but it worked the way I did it. All I had was really cold butter.

One last thought.... The glaze made a very large quantity. Way more than needed IMO. I would maybe make 1/2 the amount of glaze for the the full recipe of biscuits.

ALL in all.... these were the best! and super easy! But like stated previously... Watch out! or you will eat them all..... I had to feed them to my kids so i wouldn't eat the other 2.... They devoured them in 2 secs flat.... I spooned glaze over all 3 of them, I should have just done one, as I'm sure it would heat better tomorrow without the glaze on it first.

Excellent!!! Ty for the recipe.

Well - I am snowed in and in cooking mode. Your recipe caught my eye and I happened to have all the ingredients. OMG!!! These are dangerously delicious and sooo easy. These have now been cut and pasted into my word doc of all my fav LC recipes. Thank you!

We found a liquid splenda like substitute (can't remember the name, but it was on the acceptable list in the Atkins book) at WalMart for very cheap. It seems to work better then trying to grind up splenda! Thanks for the recipe!

I wonder if instead of glaze... we could use a cream cheese/sweetfreez mix?

I'm going to try this for breakfast this morning!!

tripletmom Thu, Mar-16-06 10:01

OK... I made these and came up with these counts:

Biscuit
2 cups Carbquik Flour (12.2 net carbs)
1/2 Cup Hood LC Milk (1.5 carbs)
12 drops Sweetfreez (0 carbs) (equivalent of 1/2 cup sugar)
1 teaspoon cinnamon (1.6 net carbs)

Icing:
4 oz cream cheese (1/2 package) (3 carbs)
12 drops Sweetfreez (0 carbs) (equivalent of 1/2 cup sugar)
1/2 stick butter (.03 carbs)

18.33 net carbs for the entire recipe.

I made six nice size biscuits, at 3.055 net carbs/biscuit.

Even if you had 2 for breakfast, that would only be 6 carbs.

BTW... the icing is AWESOME!
