Going camping this weekend, what to bring?
 
Being the long weekend, I'm going camping for at least 1 night and 2 days. I'm in the induction phase still, so I'm having a little trouble thinking of what to bring for food. I'll have a cooler with me, so cold food is all that's available.

I was thinking of lots of cold cuts (ham, roast beef, chicken, turkey) along with cheese and plenty of water. After that I'm pretty much stumped.

Any suggestions would be much appreciated.

PS - I don't eat eggs or seafood. I'm a picky bugger. :)

I'm a camper too and I LOVE this WOE for camping! Steaks, chicken, hot-dogs, salad, sliced veggies in butter, jerky sticks and string cheese for hiking...nevermind the fish...you can bring a frying pan and live it up!...

No smores... :( but for my treat I usually bring a LC cheesecake for myself and indulge by the fire at night with some fresh campfire coffee!

Also...you can leave the chips, but DO bring the dips...cucumber slices in a good onion dip, no pancakes for breakfast, but scrambled eggs and bacon is great outdoors! What about a good omelet??

Mmmm... can't wait to hear other ideas for my own trip! Just be creative and substitute the things you would normally bring...it's no biggie...have fun!!!

Ooops...sorry, forgot you don't eat eggs...how about just the bacon, cheese and shredded zucchini fried real good in butter...it kinda makes "home-fries" !!

Just reading through threads and saw this post about fried shredded zucchini. Never thought of doing that, it sounds great! I used to love hashbrowns, this sounds like it make a good sub. The cucumber slices in onion dip sounds good too. Thanks for the tips! :yum:

Have you tried little cottage cheese pancake fried in butter and sprinkle with cinamom and splenda.
No other ingredients for you since you don't like eggs. :D

There are so many things to choose from.
Olives
slices jicama
beef jerky
celery
pork rinds
cucumbers
summer sausage

Don't forget your water, very important.

I'm not sure if I'll be able to cook anything, unless it's a hot dog over the fire. Actually, that sounds pretty good! Are the average hot dogs low-carb? I'll have to look into this.

I was also thinking of making a bunch of the mock french toast pancakes before camping, then eating them like slices of bread later as a snack. Has anyone done this?

I nibble on the french toast pancake during the day. I wonder about hanging them over your fire to crisp?

I add grated cheddar to mine.I will try some dry mustard and minced onion.
:D With a bit of mayo it migh be hot dog bun material.

hot dogs, pork rinds, cheese, pepperoni, strawberries, nuts, advantage bars, dips, fish, olives, sliced tomatoes or cucumbers, sliced bacon, sausage, hard boiled eggs, celery w cream cheese.....gosh I am getting hungry! LOL

my only advice is to stay away from the marshmellows. When I went camping that was my biggest temptation....darn smores.

Great thread. What an abundance of talent here. I have recently grown to LOVE speghetti squash. If you're a person who can eat and enjoy cold speghetti, then you can make up a whole bunch of this!!! I generally use butter, parmesan cheese, salt and pepper, but don't know how that would be cold. You can experiment.

I will look up this thread later when I go camping. Great ideas!

Okay, I'm back for some more ideas for myself!!

I'm going camping next weekend and I"m so excited I can't sit still!!!

The smores will be a problem temptation, but other than that...the foods are pretty good. Any other sweet ideas??

Whats about the pancakes??? Would love that recipe.

And Joe Joe...sounds like you do REAL campin' style... I was kind of pictures MY set-up :lol: :lol: of tablecloth, candles, clothesline, laptop... :D

I know...home away from home!

But the zucchini dish for breakfast is my fav...throw in some minced onion and lotsa salt :rolleyes: and fry real brown. :yum:

Bring some Advantage LC bars...they're filling and good for the hiking.

I used to love to bring fried chicken with me in a cooler and eat it cold. try making some with the atkins batter or by using parmesan cheese as a "mock breading".

Mmmmm...now there's an idea even for the trip up there!! :yum:

My mock breading starts with lots of dried parsley, then every spice I have in the house that goes with chicken, then the parmesian...mixed all into a nice looking "bread crumb" blend... I make that for myself and use bread crumbs for everyone else, and they always want MINE!!

It's probably too late for this info to you, but for others reading, do a search at the top of the page using the search word 'camping' under Atkins thread and you will see a long post I made about a week's long LC camping trip I took last month! (Sorry, I don't know how to create links.) I tell several tips and recipes and things which made my trip a big success and DELICIOUS!! Also, a wonderful surprise I discovered on the trip because of this WOE!!!
Camping LC can be great... just took a bit extra planning.
Last night my daughter and I went to Six Flags near here and slept overnight in the "Shark Experience" exhibit for Girl Scouts. They provided meals, but I planned ahead and took LC foods... people wanted to eat my stuff instead of their pizza dinner and muffin/cereal breakfast!! Becareful!! When you start taking LC foods on excursions, others want to help you eat them!! Take extra!! teehee!
