Butter question
 
Okay... strange butter question for all of you...

I have to admit, I love butter - I used to love fresh cold butter slathered on nice fresh rolls and french stick, or on yummy toast, or hot mashed potatoes... feeling guilty the whole time because I was eating butter.

So, now that I'm actually allowed to enjoy butter guilt free, I'm at a bit of a loss as to what to have it on?!

Any tips? I'm looking for foods that nice fresh butter works on - I know I can heat it up and use it as a butter sauce for veggies, but it's not really what I'm looking for...

So - any suggestions gratefully accepted!

Howabout scampi? Shrimp or chicken scampi. I sauted S with butter, garlic, chives ... oh my.

Roast a chicken with tons of butter in and out of it...sprinkle with herbs... The "juice" is great to dip the chicken once coooked!

ok this might be a bit weird but I love it, and by the way I have the same question with regards to dips, cream cheese and etc!

I like butter on my sausage and I put a dab on the side of my plate and like to have it melt into my steak. I don't know why but it tastes great.

I love the butter sauteed veggies combination. Green beans, cabbage, onions and mushrooms and even brussel sprouts taste yummy w/ lots o butter.

You can make browned butter~— melt some butter (NOT margarine) in an iron skillet (it must be iron) and cook it until it turns brown. Don't wait too long, if you burn it too much it will turn black and lose the delicious taste. Serve as you would regular butter over veggies (it's GREAT on steamed cauliflower).

In Pennsylvania where I grew up, this is a very common thing, inspired by the Pennsylvania Dutch. I think it's used in French cooking also.

Butter actually tastes really good on grilled (or broiled) salmon. Actually, butter tastes good on everything :wiggle:

My little slice of heaven is to take a low carb tortilla, warm it on the stove burner until it's warm, pliable and a little bit toasted, then slather on butter. Fold and eat, just like that...

I use it in a lot of my cooking.

Steaks and Burgers sauteed in butter. Green beens sauteed in butter with shallots or garlic.

I also make a beurre maitre d'hotel which is unsalted butter, finely chopped garlic, finely chopped parsley and lemon. You mix all in a bowl, then wrap in saran wrap and keep in the fridge or freezer. It makes a great topping for almost any meat or fish, even cooked veggies. You just let the mixture melt on the meat.

I have always cooked with butter so I was thrilled to know that it was good for me.

I luv to make black truffle butter. It awesome on just about anything. It not cheap but damn its yummy. I use it on sauteed scallops, shrimp, my steak. Its also great just spread on Cheeters Brand Crackers!!

I slather butter on my crispbreads and eat with a cup of tea. The butter's nice and cold and fatty. Also, a relatively lc slice of bread toasted is great too.

Once out of induction, lc muffins (I prefer Ketogenics brand) are just the perfect vehicle for butter......

Melt a tablespoon or two of butter in a hot skillet and scramble eggs in it. Nothin' like scrambled eggs swimming in butter. :)
