Need suggestions re: corn dog using Atkins corn mix
 
Hi,

I was wondering if anyone has ever used Atkins' Corn Muffin Mix to make a corn dog batter? I was thinking it might taste better than using a plain LC bake mix to get that corn dog taste... and the corn muffins are so yummy that I thought it would make a great corn dog batter.

But I'm wondering how to modify the amount of oil, water, eggs, on the box to make the batter. To make 18 muffins (the entire box), you mix it with 3/4 c. oil, 1 1/3 c. water, and 3 eggs. I'm thinking it might be too thick to use this combo of ingredients for the batter.

Any suggestions?

Have you looked in the Kitchen Forum?

I think I might port this question of yours there, Jiskiyan... it's really more about recipe modification, I'm guessing... and you might get some very good answers...
