Onion Rings
 
Does anyone have any idea or a recipe about how to make low carb onion rings?

Basically, I'm looking for a sort of a batter to put on onions so I can get some more veggies in.

We have already looked at the recipe forum and didn't find anything - have posted this there as well.

I found this on the web. I'm sure you could cut the salt out...however, I don't think this is good if you are still on induction.


3 onions -- about 2 1/2" 65mm ro
2 tbsp olive oil
1/2 cup half and half -- 50% water/cream
1 egg
3/4 cup soy flour -- powder
1/2 tsp salt
1 dash garlic salt
1 dash pepper

Cut onions into 1/4 inch 7mm slices and separate into rings. Heat oil (1 inch 25mm ) in 3 quart 3ltre saucepan to 375°F-190°C. Beat remaining ingredients with hand beater until smooth. Dip each ring into batter, letting excess drip into bowl. Fry a few onion rings at a time in hot oil, turning once, until golden brown, about 2 minutes; drain.

Per Serving (excluding unknown items): 108 Calories; 7g Fat (59.1% calories from fat); 4g Protein; 7g Carbohydrate; 2g Dietary Fiber; 29mg Cholesterol; 181mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 1/2 Vegetable; 0 Non-Fat Milk; 1 Fat; 0 Other Carbohydrates.

I know a few good batters from the Atkins quick and easy book, not sure how well they would work with rings though.

Basicly any combination of soy flour, ground sesame seeds, ground pork rinds, ground flax seeds.

The most low carb high fiber would be the Flax and Pork rinds.

Atkins also has some kind of tempura batter that might work. Havn't tried it though and not sure if it is ok in Induction.

I used Atkins Bake Mix
1 cup mix
1 cup ice water mixed with
1 egg

make sure your oil is super hot and dont cook too many at once (and the rings are not wet when you dip them) otherwise the batter wont stick
they cook real fast and are super good.
oh have a plate with gobs of paper towels to put them on and use a slotted spoon, they are greasy and fragile

All of these make a thick batter and in my opinion add more carbs then you need.
All I do is slice my onions soak them in a 50%cream,
50% water mix. When you take the rings out of the cream/water mix...shake off any drips and then drop them some dry Atkins Bake Mix.
Get them lightly dusted then fry em up.
Very light batter....they taste great.
