Any pork rind substitutes out there?
 
I think I asked this on another thread, but can't find it. My husband and I are beginning on the Atkin's plan Monday, and I'm shopping tomorrow. I know we'll miss those crunchy snacks (that are potato chip-like, but as we're Jewish, we don't eat port - nix the pork rinds. Any other ideas?

Seems I remember seeing once that you could make your own "cheese chips" in the microwave or oven, but I can't find that, either, and don't remember what website I saw it on.

Any ideas???

I'm in the same boat with the pork rinds. I considered it for a minute there, but decided no.

tofu-crackers. I haven't tried them yet, but it looks promising and pretty easy. Let me know if you try them and how they turn out :)

thanks SO much! I knew it was something easy, but didn't want to try it and blow up my microwave if there was something I was forgetting :)
And by the way, nice to see someone else with a name that has an apostrophe right in the middle :)

Thanks - I really don't care for tofu regularly, but perhaps crackers would be better.

I agree, our names are alphabetically challenged, so it's nice to see some every now and then! ;)

Chicken skins work quite nicely too.

Save the skin from your chicken parts, or perhaps the butcher will provide you with the scraps from preparing skinless chicken breasts, etc ... Scrape away the fat from the pieces of skin ... Melt the chicken fat in a large skillet, and fry the pieces of skin a few at a time until browned and crispy (med to med high heat, and watch so they don't burn) .. drain on paper towels, salt or not as desired. Yum, and zero carbs ;)
