Breakfast
 
So what is everyone having for breakfast?
In my very short experience of LC, I got very sick very quickly of eggs for breakfast. So this is what I have now:

I scoop Atkins Vanilla Shake (NOT 2 as per instructions - otherwise tastes VERY powdery) 0.5g
Whizzed up with 50g frozen berries 3g
1 slice Keto bread 3g
With butter and some strong cheddar cheese <0.1

So this comes to about 6.5 which is my highest meal. But as far as I'm concerned worth it as I can't be cooking or eating cooked food in the morning. Need energy first thing to keep me going in the day! :roll:


Anyway would be interested to see what you all have.

Vegetarian breakfast ideas
 
Hi! My name is Stephanie and I'm a fairly new (1 1/2 month) Atkins dieter and also a vegetarian.

I have also had trouble finding something to have for breakfast because after the first week I was so sick of eggs also.

Here's some things that I have had:
celery with cream cheese
quiches of all sorts (kind of makes the eggs taste different)
the 'zucchini pancake' recipe from Dr. Atkins website
some leftover roasted asparagus with a side of cheese

I also had a wonderful dinner the other day that also made for great leftovers. I used assorted low carb veggies (zucchini, tomato (just a little one), mushrooms, and broccoli, cubed some mozzerella, and used pesto for a dressing. It was so good!!! Even my non low carb non vegetarian husband liked it!

Tonight I'm going to make some egg drop soup that I can eat for breakfast for the next few days!

If you eat anything different let me know! I would love to hear your ideas!

This isn't a breakfest item, bit I make it alot and frequently have leftovers for breakfast.

I take thin long slices of eggplant bake lightly until soft, roll them up with some cubed tofu and mozzerella, if I had some basil around I would add a bit, then place in a baking pan with a little more cheese on top. I add a tiny bit of marinara sauce mixed with a little water because the eggplant gets dry if there is not something moist in the pan. Then bake for about 15 minutes.

The amount of marinara I add totally depends on how good I have been at watching carbs during the day.

I had 1/2 an english mufin, 1 breakfast pattie with 1/2 slice of soy chesse and 1/2 and apple.....

Ground flaxseed hot cereal!

Ground flax, boiling water, then add heavy cream, sweeten if you like.

Also, flaxseed in bulk is SUPER cheap!

I am not usually hungry in the morning but I get up very early so I have to have something. The key to the shakes is:
1. very cold. Put 1.5 cups of water (recommended 1 will be too thick) in the freezer half-hour before making shakes (or use some ice).
2. must use blender
3. variety. Atkins is good. Vitaminshoppe brand is sweeter, better physical character (thicker). I make various mixtures. Best: 2:2:1 chocolate:vanilla:strawberry, but even this you get tired of.
4. taste is good enough.

very filling. don't get hungry until noon.

quiches! why didn't i think of that?!! i use a lot of the shakes because i've so little time in the morning before work. but i think quiche would make a good 'to go' breakfast. thnx

I had one light english muffin (much lower in carbs than reg. english muffins), toasted, stuffed with a little mayo, one Morningstar Farms Better N' Burger, and about 2 oz. yogurt cheese.

This really filled me up and kept me full for HOURS.

Nature's Grain makes the Light English Muffins. They are loaded with fiber and very tasty; I can't tell the difference from regular english muffins.

The Yogurt Cheese comes from Trader Joes. It's a hard, slicing cheese (like a cheddar...but doesn't taste as good!)...will use it up, but can't say I'd buy it again!

But overall this was a quick, tasty breakfast. Next time I'll make it with cheddar cheese.

I also think that breakfast is the biggest problems when it comes to vegetarian lowcarb eating - especially when you have a sweet tooth and you happen to be sick of eggs in the mornings all the time! Before I changed my eating lifestyle, I had cereal in the mornings and I know now why I was hungry at 11 o'clock again ..... Anyway, I'm willing to bake ahead, but are there any decent recipes out there? I found lots recipes with Splenda in it, but unfortunately that's not yet available in my neck of the woods and they also don't ship out of the US. I'd really appreciate some creative ideas.... :sunny:

for something sweet I recommend the mock danish (in the recipe section in breakfast area here) or yogurt (full fat plain sweetend with sf syrup or splenda).

it's not sweet but is nice for breakfast an atkins corn muffin with cream cheese. but I don't eat that too often.

My latest veggie breakfast fave is sort of a pancake: mashed tofu, an egg to hold it together, and chopped green pepper. Fry it for a minute or two, then flip. Add grated cheese on top, if you'd like.

I also like Yves veggie Canadian bacon. It tastes quite good and only has 1 g carbs in 2 slices. Beware of their other products, though - some have a lot more carbs.

Hi Choel

I saw you lived in germany so I wanted to give you some tips as I have lived there as a lowcarber.

1) Splenda isn't available but there are TONS of diabetic sweeteners. Just go into any large supermarket and you'll find loads. DO NOT USE FRUCTOSE!!!!!!!!

2) Lindt does diabetic chocolate in dark, milk and hazelnut flavour and it is divine. Again try a large supermarket.

If you can't find either of these just mail me and I'll give you the name of the supermarkets I buy them in.

I usually do a shake, Whey powder, either frozen blueberries or strawberries, flax, soymilk, and stevia to taste. Either that or flax hot cereal. I gag on eggs any more so I had to let up on them. I do have them once in awhile though. Judy

i started adding ALOT of garlic and veggies to my scrambled eggs in the morning. Sometimes I'll cut up some veggie meat to put in there too and cheese cheese cheese! I usually top it off with a little sour cream. Of course those are the mornings I actually get up in time to make that. Often I just grab a low carb yogurt (by Dannon), or an Atkins shake (I know they're bad but sometimes ya just gotta do what's fastest). Hope this helps.

I had something this mornign that was very easy to do and tasty. I took some whipped cream and stirred in two scoops of vanilla whey protein powder.

I had a really hard time with the beginning of my atkins as well since I hate eggs with a passion. The bagel and cream cheese was perhaps the hardest thing I had to give up. A couple things I found to satisfy me for breakfast were 1/2 cup or so of ricotta cheese mixed with 1/2 pack of splenda, 1/4 tsp of vanilla extract and sprinkle with a tbls. of chopped nuts and 1/4 to 1/3 cup berries. ( that was for second phase of atkins)

Another breakfast idea is "scrambled tofu" basically just saute in a little olive oil or butter some green onions, green pepper and broccoli. When tender add a pinch of chili powder and cumin salt and pepper, when fragrant add some crumbled tofu and a TBLs or so of your favorite salsa. Top with a little cheese if you like.

Also the atkins site has an awesome recipe for zuchini, feta and walnut 'pancakes'. I can't remember the name exaclty but an ingredient search should bring it up.

Anyways, goodluck in the search for better breakfasts! :)

I had half an avocado this morning with a hunk of cream cheese where the pit was. :thup: Needs no cooking and you don't even need a plate. I'm still full as of noon. This is also nice with ranch dressing drizzled over it, though that's not usually a "morning" thing...

Hiya. I got sick of eggs pretty quickly too and have been looking for
some fast filling breakfast alternatives. Today I tried an oatmeal
taste alike that is very good.

3t flaxseed meal
3t So soya or TVP
1/4 C water
Mix and zap for 1-1 1/2 min in microwave.
Top with a dash cinnamon, splenda and or a few frozen berries.

Another invaluable find for me is Bocca burgers. They are meatless,
4.5 g carbs, 2 g fibre, delicious with mustard and if that isn't enough
they are packaged individually and microwaveable! They also have
other products like chickn style nuggets but they are higher carbs
about 4 g per small serving.

I am not a brekkie person so I usually eat a fruit and drink huge amount of cold tea. Then, around 10am I eat 1 oz nuts and maybe a cracker.

One of my new breakfast favorites is to fry cabbage in a little olive oil and sprinkle with just salt and pepper with a slice of cantalope on the side. It's a nice change from traditional stuff.

i order bagels from the low carb emporium. they claim to be 2.5 ecc per bagel. i think they are wonderful! i ordered some from todd's bagels once and gave them ALL away! and i think everyone hated them as much as i did. i never give away my other ones...ok, i do give away one every now and then for people who want a sample. they come in spinach, sicilian, cinnamon raisin, poppyseed, sesame and even one or two other flavors. yummy! i usually use mine for lunch or dinner with tuna salad! (not the cinnamon raisin ones!)

I think dannon(?) makes a low carb yogurt now.
I am not a strict low carber so I probably eat more
carbs than most of you. I have a low carb
breakfast bagel, a bagel toasted (Thomas's) and
this recipe using a slice of vegan cheese (Tofutti)
and Gimmie Lean sausage and pan grilled tofu slices.

You could always skip the bread and just have the

hard cooked eggs with Morningstar Farms Veggie Sausage Links.

I read the authors of Protein Power Life Plan suggest mashing your hard cooked eggs with butter, salt and pepper and nuking them to warm, then eating. This sounds very filling - bet it would fill me up for hours with my veggie sausage!
