spaghetti squash

Does anyone have any recipes or tips for this - I'd like to give it a try.

Thanks

My DH has made parmesan chicken with marinara sauce to go with it. He has also made The Spaghetti Factory's recipe for myzithera (sp?) and brown butter to go with it.

Chicken Spaghetti Squash Alfredo

2 cups cooked spaghetti squash
3 tablespoons butter
3 tablespoons heavy cream
1 clove crushed garlic
1/4 cup grated or shredded Parmesan cheese
Package oven roasted chicken, or some of your own.

Stab the spaghetti squash several times with a fork (to keep it from exploding) and put it in the microwave on high for about 15 to 25 minutes. Depending on the size of the squash and how powerful your microwave is. Then slice through it and open, scoop out the seeds. Take a fork and start scraping at the meat (spaghetti) of the squash.

Stir in butter, cream and garlic, and cheese. When butter is melted add warmed chicken! And that is it!

4 servings, with 4 grams of carbs a servings.

I have seen recipes for Spaghetti Squash and would like to try it also..what exactly am I looking for when I go to Walmart??? LOL
I know this is a vegetable but I have only seen butternut squash and zucchini...what kind of squash do I look for? LOL
Silly question but if I don't ask I will never know and I really don't have the nerve to have my name announced aloud in the local Walmart "Rosalynn in the produce isle wants to know what a spaghetti squash is can you believe it?" LOL
Thanks in advance to anyone who knows what this is :)

chysmith Mon, Jun-02-03 12:34

It looks like a big yellowish/orangish ball. Actually, it's slightly larger than a cantelope and the skin is smooth, like watermellon skin.

When DH cooks our squash, he usually cuts it in half, places in a microwave dish, and covers with plastic wrap. Then he cooks it in the micro but I don't know the time on it.

Rosalynn Mon, Jun-02-03 12:41

Thanks a bunch! :) I am sure you just saved me from a most embarassing situation at Walmart tonight when I go grocery shopping. NOW..off to find recipes! <giggles> :)
Thanks again! :)

Cut the raw squash in half and use a spoon to remove the pulp and seeds, same as you would a pumpkin at halloween.

Cover the cut side with plastic wrap, then place it cut side down in a glass baking dish. Put about an inch of water in the dish and zap it for about 10 - 12 minutes.

When done, the skin should give slightly when pressed. Remove it from the dish and take off the plastic wrap (beware of escaping steam). Scrape the interior with a fork. It should come off in convenient spaghetti-like shreds.

Cover with your favorite sauce and serve. :)

Thanks Scott! I was hoping you'd come by and give the needed info.!

erbadger Mon, Jun-02-03 13:37

I cook mine in the oven,
cut in half (long ways), remove seeds and innards
lay flat side down in dish
cook at 425 for 40-45 mins
use fork to remve spaghetti

i make this all the time, but it is a little carby, so watch out!!!

Iowagirl Mon, Jun-02-03 13:46

I cover mine with alfredo sauce or just butter. :yum:

wordlady Mon, Jun-02-03 13:51

This is one of my favorite all time foods. Back from the WW days..but I didn't get to use butter then. I like garlic and butter......and some onion flakes. Yummmmmy, and so filling, tasty, and satisfying.

CNDYPRC Mon, Jun-02-03 13:53

I tried spaghetti squash

and had a great sauce for it, but I didn't like it at all. I'm not a picky eater either, and usually enjoy trying new foods, but this one didn't fly. I cooked it according to the directions (in the oven in some water--don't remember the measurements), and it came out like spaghetti, but it tasted so stringy and crunchy--yuk. I'm afraid to try it again. :(

Come on! Everybody's doing it! (peer pressure :D )

Have you tried cooking it in the microwave? Much faster.

Kareny Mon, Jun-02-03 14:57

I had mine come out crunchy once - it was undercooked. Now I sort of know what to look for.

Love this stuff. I made up a big old pan of spaghetti squash carbonara last night and am living off it all week! Yum! I believe this one should be available on Karen's recipe pages.

Scared, Sounds Nasty

Spaghetti Squash sounds scarey. I've heard a lot of people talking about it. Does it taste like a vegetable?? I'm not a big vegetable fan - thank goodness for lettuce. I wouldn't mind it maybe if it was soft but crunchy - yikes. Does it taste like Butternut Squash?

Iowagirl Mon, Jun-02-03 15:25

Doesn't have much taste at all, actually. Just a vehicle for alfredo, for me. :D

cdnbarbie Mon, Jun-02-03 16:52

I personally don't like the stringiness (is this a word? lol) of the spaghetti squash, although I love the flavour (which I think is very close to a buttercup winter squash.

SOOOOOOOOOO, I take one of those handy dandy hand held Braun blenders to it and puree it!

A pat of butter, a bit of non-salt and I'm all set to enjoy!

S_Hysmith Mon, Jun-02-03 17:00

I think the stringiness is what draws people to it. As has been pointed out, pasta (or noodle shaped food) is really nothing more than a means to transport the sauce to your mouth.

Think about it; what would bare noodles, no butter, no sauce, taste like?

On the other hand, ya gotta have something to hold up the sauce; otherwise we'd all be eating bowls of marinara with a spoon! :D

Rosalynn Tue, Jun-03-03 08:07

Thanks a bunch! :) I am going to try this next week when my induction is up..today is day seven! Yay! :)
I looked up some recipes also and am eager to try them as well...atleast now I know what a spaghetti squash is and can find one without the embarassment of asking LOL
Happy Tuesday! :)

worthit Tue, Jun-03-03 11:39

I have cooked this, removed it from the skin, and - in my former life- covered in lots of cinnamon, sugar and butter. Now it would be modified to eliminate the sugar, substituting Spenda. Sort of like a baked sweet potato or yams this way.

red1cutie Tue, Jun-03-03 12:00

How about pumpkin instead of squash? How long do I have to cook the pumpkin in a pot?

That recipe sounds delicious Mary Tou!

Peace

We love spaghetti squash! I've made it so far with garlic and butter, low carb spaghetti sauce, and clam sauce. I don't buy it too often because hubby tends to overdo it, but I just picked one up the other day...lol. I had never heard of it before Atkins, but it sure is versatile! There is a website, although I don't have a link right off, that has nothing but recipes for spaghetti squash. If you do a google search it should be near the top. What a terrific little creation it is :)

freezing the cooked squash?

Has anyone tried freezing the spaghetti squash after cooking? I freeze the winter squash and have so much of the spaghetti planted that it would be easier to store if I can.
TIA

LadyBelle Fri, Jun-06-03 20:52

I am trying the chicken alfredo one tonight. The only problem I have with it is there isn't much sauce. The taste is really good though. Having speghetti that crunches is odd, but I like it better. I probably undercooked it, but like I said, I like this better.

Birddog Fri, Jun-06-03 21:15

I love Spagetti Squash. Like Chysmith. My husband cut the squash in half , put a little water in the dish, covers in with plastic. My dh says the directions on a sticker stuck on the squash. He flakes it out with a fork and adds butter. It is so good and sweet.

lindaklkw7 Sat, Jun-07-03 23:27

This looks great! Can't wait to make it on my day off!

ichihuahua Mon, Jul-14-03 09:36

Same question here. I normally hate squash, and zuchinni, too. Does this kind taste squashy? Also, can you tell me if Food Lion (S. VA) carries it? Is it seasonal?

gawdess Fri, Jul-25-03 08:53

Mmmmmm.....alfredo...

Spaghetti Squash and Cilantro Pesto

Here is a recipe that is a favorite of mine:

SPAGHETTI SQUASH WITH CILANTRO PESTO

--------------------------------------------------------------------

1 medium spaghetti squash (about 2-1/2 pounds)

3/4 cup chopped fresh cilantro

1/4 cup chopped fresh parsley

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1/2 teaspoon salt

1/8 teaspoon pepper

2 cloves garlic (more if you dare)

1/2 cup coarsely chopped walnuts, toasted

--------------------------------------------------------------------

Prepare and bake or microwave squash as directed below.

While squash is baking, place remaining ingredients except walnuts in blender or food processor. Cover and blend, or process, until mixture is smooth.

Place squash strands in a large mixing bowl. Stir in cilantro mixture and walnuts. Serve. Garnish with chopped tomato if desired.

--------------------------------------------------------------------

To Bake: Preheat oven to 350 degrees. Wash spaghetti squash. Cut in half either lengthwise or crosswise (crosswise will result in longer strands).Remove seeds and fibers.
Place squash halves skin down in ungreased rectangular baking dish 13x9x2 inches. Sprinkle cut sides with salt and pepper if desired. Dot with butter or margerine. Cover and bake about 40 minutes. Remove strands with two forks.

--------------------------------------------------------------------

To Microwave:Wash spaghetti squash. Pierce whole squash with tip of sharp knife in several places to allow steam to escape. Place squash on microwaveable paper towel in microwave oven. Microwave uncovered on high for 18-23 minutes, turning squash over after 8 minutes, until tender. Let stand uncovered 10 minutes. Cut in half either lengthwise or crosswise (crosswise will result in longer strands).Remove seeds and fibers. Remove strands with two forks.

my mother use to make this for me when I was a kid. I've tried to make it myself, and it didn't really work.
Could someone post instructions?
