fast breakfast

Does anyone have ideas for breakfast on the go?

I don't have time to make eggs and bacon for breakfast.

vbrowne Mon, Apr-28-03 13:08

I take hard boiled eggs, cheese with large coffee and heavy cream.

Sometimes I have a Atkins Shake for a quick breakfast. Or make egg salad the night before. Sometimes I have eggs made in the microwave only take about 40 seconds to make and they are good, and some bacon by Oscar Myers or Jimmy Dean that already made only take 30 seconds to heat in the microwave and they only have 2g of carb for every 3 slices.

A couple slices of cheese rolled up with slice of roast beef or turkey is also a good choice, and you can eat them in the car or once you get to work.

Flax meal muffins are great. Have you tried microwave bacon? It only takes about 3 1/2 mins in the micro. Some people have make ahead fritattas, though I haven't tried them.

I made the frittatas and they are pretty good. Only problem was that the recipe makes too many, so after the third day, I'd about had it with them. But, cut the recipe in half and you should be fine.

Sometimes I'll have an Atkins Breakfast bar - cinnamon bun. Pretty tasty and filling. And I'll have a couple of strawberries on the side, along with an Orange Fruit 2O. Mmmmmm.....

Freeze those frittatas...they reheat well.

I buy the precooked bacon and just nuke it for a few seconds. The mock danish only takes a couple of minutes in the microwave, too, and is a nice change of pace. I have used the Carb Solutions shakes when I REALLY don't have time to eat. I can't say they taste very good...but it's better than going without breakfast if that's my only option. Leftover chicken salad or tuna salad works, too, and is quick. I try to keep several things already made up in the fridge so I'm not tempted to make a bad choice in a pinch. Spend a little extra time on the weekend planning ahead for the week and you won't have to think about it so much when you're in a hurry.

What's a frittata?

I looked on the recipe board and couldn't find what a frittata is...what is it, and recipe please

Yep - Planning ahead is key. I have been spending a lot of time on my weekends preparing food for the week.

For breakfast I really like the crustless quiches - that's a week worth of breakfast. It takes just a minute to warm in the microwave and you can use whatever ingredients you like. I have been thinking about trying to make this recipe in large muffin tins to get individual servings. I'm sure they would freeze well.

The canned Atkins shakes are not bad and extremely convenient - too bad they are so expensive!

I cook bacon on weekends and wrap it up in napkins and saran wrap, then in the a.m 10 seconds in the microwave. Today I had a funeral to go to out of town, so I grabbed a couple of slim jims, two cheese sticks and a atkins drink. Only it wan't enough to hold me for lunch and breakfast.
Boiled eggs I keep on hand also, slice cheese and wrap for on t he run.

I sometimes have an Atkins Shake or Advantage Bar for breakfast. Both are quick and can be eaten/drinken while driving or getting ready to leave the house. Beware some find they stall them, but I've never had a problem with either. Any bacon can be cooked in the microwave, you need not buy precooked or anything special, just be sure to wrap in lots of paper towel so you don't have grease everywhere. If you're past Induction, the Atkins Muffin mixes are good too. You can make the whole box, or 6 at a time. If you make the whole box just freeze them, & reheat in the microwave. Store in fridge so they last longer if you don't freeze them. They taste good with lots of butter.
God Bless,

I had to get up at 3am to catch a flight not long ago. Knowing I wasn't going to eat much on the plane, and wanting to get as much sleep as I could beforehand, I had some hard boiled eggs, microwave bacon and a cup of plain full-fat yogurt with a splash of DaVinci syrup in it. Took about 3.5 minutes to fix (while the bacon was zapping I stirred up the yogurt and cut up the eggs.)

That helped me last until afternoon, when I had a couple of Atkins bars stashed in my carry-on.

I tried the shakes and just couldn't force myself to like them.

I also make up a lb. of bacon at a time. I bake it at 400 on a broiler pan for about 13 minutes and then stick it in the fridge. I love it cold with a cold boiled egg, or stick it in the microwave for a few seconds if you like it warmed up.

I made chicken rollups (with Alpenjoy cheese inside instead of the Smoked Gouda) and since I opened a package of bacon to wrap the chicken rollups in, I just threw the rest of it on the broiler pan and stuck it in the oven with the rollups to bake. Now I have a couple of meals already made (providing hubby doesn't eat all the bacon in the morning...and that is providing I don't eat it all tonight before he gets home...lol).

I like to have 1.5 tablespoons cream cheese softened with 1 packet of Spenda and like .25 cup sliced Strawberries.-Yummy.

CarolynC Sun, May-04-03 22:30

Take 1/3 cup of ricotta cheese, add 1 tablespoon of cream, and whatever DaVinci syrup you want for flavor. Mix and enjoy. It's good for breakfast or as a quick snack.
