Cheese Cake
 
I posted this on my old LC forum last year ... and wanted to share it with you all ... it really is fantastic.

2 packages 8 oz cream cheese
2/3 c sganulated plenda (I tend to use a little less)
3 eggs
1/4 tsp. vanilla extract

soften the cream cheese and beat all ingredents until good and smooth (you can't beat it too long if you know what I mean)

Pour into pie pan. Bake at 325 for 50 mins. Cool for 20 minutes.

Topping
1 cup sour cream
1 tsp vanilla
3 Table spoons granulate Splenda (again I use a little less)

Mix and spoon on top of "crust"
Bake another 15 minutes at 325. Best served cold.

I love this recipe. I bake them in a cupcake pan. Than I can just grab one out of the fridge. they are great for a quick breakfast.

I learned the hard way.... splenda tastes a thousand times better than sugar twin. I will never use anything but Splenda. I made this recipe last night and used sugar twin and now I am not sure I can eat it. The taste is unusual.

This is really a great recipe - I made it this past weekend.

FYI for those in my Cooking for Dummies way of life - an electric blender really helps with this so it's fluffier.

I was thinking of using ground almonds, eggs and splenda to make a crust. I made the Tiramisu which used basically the same combination to make the cake part of it. I figure less eggs and more ground almonds than the cake though. Then I was going to mix some fresh pumpkin in that I am carving from my Halloween pumpkin tonight. I figure it will be fairly fibrous and so if I only eat a little at a time, it will not be that many carbs.

Hey,
Just wanted to let you know that I made this cheese cake last night and it is wonderful. I used some sliced almonds, atkins bake mix, butter, splenda, and some peanuts for a crust, oh and a pinch of cinnamon. This was soooo good I had it for breakfast. I took some sugarfee chocolate syrup and drizzled it over the top(last night). which made it look pretty also. Sitting at my desk this morning eating cheese cake for breakfast, and I'm on a diet? You gotta love this :D !

I made two of these last night with no crust, I made a vanilla one (as per this recipe) and a strawberry one (threw 3/4cup strawberries into the food processer as I mixing it all together, added a tsp of lemon juice to the topping and they are beautiful!!!

Thanks for posting this recipe, its going to be a firm favourite in this house!

Made this tonight with a different sweetner and added Lemon extract to the sour cream mix. Loving it, it is sooooo tasty!

I'm in the process of making homemade cream cheese so I can make this recipe.

Homemade cream cheese has less carbs.

These values are based on using 1/2 cup of Splenda in the original recipe in the first post:

Okay the first one was so good. Sprinkled some chopped walnuts over the bottom of the pan for a crust. Used half the sweetener. Added fresh raspberries.

Second one used even less sweetener, frozen chopped Cherries, some grated chocolate. Mashed some butter with almond flour and made it into a crust which I browned while the oven was preheating.

Awesome.

Thank you, Werebear!!! I knew I'd seen a super simple cheesecake recipe online somewhere recently and couldn't remember where. I sat right here at my computer last night going nuts looking for it. And here it is! If you hadn't posted and bumped this up I never would have found it. :wave:

I scraped a chocolate bar with a steak knife to sprinkle the cherries

1 1/2 tbl sweetener

Mix and spoon on top
Bake another 15 minutes at 325.

Cool completely, then overnight in fridge.
