What did everyone have for dinner last night?

Try anything new?

I made spaghetti squash alfredo and had roasted pecans with a little splenda, a couple strawberries and some soyslender.

etoiles Wed, Aug-20-03 12:59

My husband and I had a meal with all new items and it was completely delicious!

We had brie baked with mushrooms and meatballs in a sweet and sour sauce.

Was really wonderful we will have that again!

lkonzelman Wed, Aug-20-03 13:22

I had protein powder pancakes:
1 scoop Trader Joes Vanilla Whey Protein powder, 2 eggs, 1 TBS heavy cream, 1 tsp vanilla extract, 2 TBS oil, 1 tsp baking powder

Had butter and keto syrup as toppings.

hippygal Wed, Aug-20-03 14:52

I had a huge salad with spinach, romaine, bacon, tomato, cheese and garlic ranch, topped with grilled chicken. Even fed it to the kids. Everyone was STUFFED!

alaskaman Wed, Aug-20-03 16:02

what did you have for dinner

I had a small grilled steak, with atkins teriyaki sauce, and some Cauli-flied rice, lots of green onions, couple eggs scrambled up in it. I love that stuff so much that even though its lowcarb, I have to be careful not to overdo it. I made a small batch with 3 big florets - that was all I dared. Bill

Rosebud Wed, Aug-20-03 16:15

Tuna patties, served with a mix of mayo, sour cream and lemon juice.
Stir fried mushrooms, cabbage and pak choy.
Followed by strawberries and cream. :)

Funny, I was going to start the exact same thread after my particularly tasty dinner tonight!

I made fried "breaded" tofu (dredged in egg and soy flour with salt, pepper, cayenne, and toasted sesame seeds) and a shrimp curry with broccoli, green pepper, onion, simmered in Patak's Tikka Masala Cooking Sauce (6.2g Carbs/100g serving). I served the tofu like one would polenta. It turned out quite good I think and would make a good snack with some dip (I tried it with babaganoush - yum!). If you're missing crispy fried stuff, try soy!

jers52 Wed, Aug-20-03 16:56

tonight I had "unwrapped piggies" - cabbage pieces , ground beef and tomato sauce (LC) thrown into the slow cooker- I even added some cauliflowered-"rice"- the lazy way to have pigs in the blanket!

JV1311 Wed, Aug-20-03 17:27

I had my latest favorite:

3oz chicken steaks, seasoned and pre-cooked with garlic, topped with 1/2 sliced onion, 1oz molten gouda, 2 slices bacon, and sugar-free ketchup with a romaine, tomato and mayo side salad. It is just like having a chicken sandwich, minus the bread.

Cotes de Porc Auvergnat -- pork chops sauteed in butter, then baked in a casserole dish between two layers of creamed cabbage, with a little white wine -- followed by a slice of cheesecake with homemade strawberry sauce. Delish!

Skamito Wed, Aug-20-03 21:58

My parents are in town and so we went out to eat. Surprisingly, a local restaurant actually had a piece of paper up with the Atkins logo touting their Atkins-friendly choices. They had my usual on there. Petite steak and shrimp with Caesar salad (no croutons). ;)

Further Wed, Aug-20-03 22:23

dinner

I had 2 salmon steaks with butter and lemon and some okra and a block of melted bakers choclate with a tea spoon of peanut butter and splenda melted in.

Karen Wed, Aug-20-03 22:30

Thai BBQ chicken wings - wizzed up cilantro, fish sauce, garlic and lots of black pepper in a blender to marinate the wings - peanut sauce and a Japanese cucumber. Later, did more wizzing...frozen blueberries and strawberries, stevia and soymilk.

I had a huge Red Lettuce salad with spinach, brocolli, egg slices, and Ceasar dressing... it was soooo good.

Spinach with creme fraiche
half Roasted yellow pepper with cherry tomato in the middle.(that was the new bit...delicious :yum: )

2 glasses red wine

1 nectarine

Vel Thu, Aug-21-03 04:32

I had..

Coleslaw with raisins, a bacon/tomato sandwich on whole wheat bread, ice cream with a banana and chocolate sauce, 3 prunes, 1 macadamia nut cookie.

RCFletcher Thu, Aug-21-03 06:16

Roast leg of chicken, broccholi, corgettes (zuchini?) and roasted parsnips with stuffing (made from almond flour and herbs).
Dessert - strawberries.

saltnpeppa Thu, Aug-21-03 06:27

wow, I want to throw a potluck party and invite you all! what great cooks!
I had steak rubbed with a 6 pepper mix I got from Sam's club (SF, 0 carbs).

gawdess Thu, Aug-21-03 06:49

I know I would definetly go to that dinner party...Lots of good stuff!

Karla Thu, Aug-21-03 07:22

Nothing as exciting as some of the rest of y'all! Since it is really hot and humid up here in the Northeast I was not willing to cook anything, so dinner consisted of tuna salad, coleslaw, and sliced tomatoes from my garden.

DoubleD Thu, Aug-21-03 07:37

I had a 4 ounce grilled filet mignon steak (yummy!) and 1 cup of steamed green beans with salt and butter.

hotirishdi Thu, Aug-21-03 08:13

I had a taco salad... Pitiful compared to all the WONDERFUL suggestions here! I'm so glad I found this thread just as I was getting bored.

Thankk you!

amylee Thu, Aug-21-03 11:08

greek salad
cucumber chicken (atkins quick and easy recipe which surprised me by being so yummy)
molten chocolate cake on a bed of crème anglaise with strawberries

Kristine Thu, Aug-21-03 11:17

I overdid it at the grocery store and had too much to carry home with me in the heat and humidity, so I was too tired to cook. :D The apartment was too hot, anyway. The appetizer was a t-a-l-l glass of fresca (citrusy diet soda) with ice. Dinner was green pepper slices and cold leftover chicken breast dipped in ranch dressing. :yum: Good enough for me!

breezy41 Thu, Aug-21-03 15:13

I made a lasagna for the family and baked myself some spaghetti squash topped with meat sauce and mozza cheese. Mmm-good. I had the leftovers for lunch today too. Even better the next day!

Lisa N Thu, Aug-21-03 19:37

Tonight we had rotisserie chicken with a big tossed salad (mixed greens, cucumber, tomato, radish and red onion) with a bit of shredded cheese on top and Caesar dressing along with a hot veggie (California blend) for those that didn't care for salad. Sugar-free ice cream for dessert.

Last night was Chicken Florentine (boneless chicken thighs on top a bed of spinach cooked with bacon and onions and sprinkled with parmesan cheese)

plum Fri, Aug-22-03 01:57

pan fried cinnamon pork chops
home made coleslaw
lettuce, onion, tomato salad with lime and oil dressing.

Love our menus. Surprisingly enough, no one sitting down to a plate of meat alone to gorge on, as represented by UK media ;-)

Demi Fri, Aug-22-03 04:03

Last night we had oven-baked quarter pounder burgers (they are more succulent when cooked in the oven), with melted emmenthal cheese - on the side - a salad of rocket leaves and sliced tomatoes - with sour cream and chives. Pudding was strawberries and blueberries smothered in thick double (heavy) cream :yum:

The tomatoes we had were Italian Sanmarzano plum tomatoes, which I came across when I was food shopping yesterday - they are used in Italy for an authentic ragu sauce - and the Italians also eat grilled on ciabatta drizzled with olive oil. They were just as delicious though sliced and uncooked in our salad :)

Amylee, that molten chocolate cake on a bed of crème anglaise with strawberries sounds wonderful - could you supply the recipe for the cake please??

Karen Lynn Fri, Aug-22-03 06:43

We had my own recipe for pizza casserole. It's everything low carb on a pizza thrown into a casserole dish and baked until bubbly. plus some steamed cauliflower. it was great and it makes a great breakfast too! :-)

hysteria Fri, Aug-22-03 07:39

Hamburger spiced up w/ garlic powder, w/ cheese, large salad w/ mushroom, cucumber & ranch dressing.
Quick & easy :)
