Speaking from experience I can say you don't need to be afraid of fats. In fact, whenever I'm having trouble controlling my sugars I go to a high meat/high fat/very low carb way of eating just until things stabilize a bit. My cholesteral went from 'not so great' to 'just fine' by eating this way.I have good days and bad days sugar-wise. Some days I can eat more carbs, some days I need to get as close to no carbs as I can. I don't take insulin so I'm afraid I can't advise you in that area, but lots of other folks here can help you with that. Basically the best advice I can give you is to follow Dr.Bernstein's recommendations to the letter. After all, the man is a Type 1 and has been for a very long time. He is living proof his system works.
