Coconut Oil
Thanks for the information on Coconut Oil. I was unaware of any differences in saturated fat levels, but now that you explained it to us all I will consider trying it.

If you're at all handy with a hammer :D ... fresh coconuts are your absolute best (and least expensive) source of unprocessed coconut oil. Of course, it's also messy and time-consuming.
Freshly made coconut milk (from blending the meat with boiling water then straining out the solids) is divine in curries and Thai soups, sauces. Canned coconut milk is minimally processed ... look for a brand that has no added sulphites. It has 6g net carbs per cup/ 8 fl oz Doreen |
