I would not cook in corn, soybean, safflower, sunflower, and especially canola. I try to avoid using these oils at all. Here is some info, if you are interested in reading a long, but very good aritcle:

I cook with butter, olive, cocunut, palm, and ocasionally peanut oil

This has nothing to do with margarine vs butter, but just a reminder that olive oil burns at a higher temp, so it's great for cooking!

how about "expeller pressed" oils? i should still not cook with those ? i heard they were better... but maybe with the cooking, they arent..

well i think i answered my own question about oils. from the atkins site:
"Acceptable Fats and Oils
Many fats, especially certain oils, are essential to good nutrition. Olive oil is particularly valuable. All other vegetable oils are allowed, the best being canola, walnut, soybean, grapeseed, sesame, sunflower and safflower oils, especially if they are labeled "cold-pressed" or "expeller-pressed." Do not cook polyunsaturated oils, such as corn, soybean and sunflower oil, at high temperatures or allow to brown or smoke."

its interetsting how much conflicting information is out there... catfish says never cook in canola whereas atkins says that you should...

also, catfish, im in tucson too :) have you been to the new low carb cafe they built on euclid/1st?
